So yes we can no longer fight on the battle field but we could still use a sword for defense. But she is right about haveing to get used to the balance but this nothing that practices can't fix.

The strength of a second arm is incredibly valuable, either in holding a shield or reinforcing your grip on a two-handed weapon. Yes, it's "completely possible" to fight with one arm, it's also "completely possible" for a toddler to fight a full grown man.

If a kinght can in our history can do that then it can most definitely happen in unterram. Once the listener grown out of the stubbornness about a prosthetic, with the right amount of train and determination they will mostsertanly be able to fight again. The determination and intelligence of human is a powerful thing if used correctly.
