I'm super glad you caught the "words left by the grandmother" from the little village chief. It's such a minor thing, but everyone seems to overlook it.
The issue with Stark is not that he's a coward, it's that he has extremely low self-worth. His memories were from a perspective of someone who has always failed in the eyes of others.
He begins by telling us that nobody cared for him and that he never received praise from Eisen. We see those memories from a new perspective this episode.
In the flashback of his brother when he was at the cave of the Hero's Sword, that's who he thinks of as a hero apart from Himmel. He doesn't see himself as a hero. So he didn't try.
He's always trying to be a good person and help others because of Himmel and his brother Stoltz, but he can't shake his own humility.
I cry a little every time I see this episode.
Also, now that we have the basic history of the original group.. The Hero's Party who defeated the Demon King consists of:
    Himmel the Fake Hero
    Heiter the Corrupt Priest
    Eisen the Cowardly Warrior
    Frieren the Dishonorable Mage
