A couple canning tips to try: 1) your pressure canner might need a very light smear of Vaseline every few sessions to make it easier to pit the lid on and off. 2) if your water is hard and leaves mineral deposits on your jars, put a splash of white vinegar in the canning water. 3) try the Forjars brand of canning lids. If you like them (you will!) they probably will give you a discount code for your users. They really are very good and you can order them in bulk.

That sure was nice looking meat you were cutting up and Cynthia was jarring. There are wild boar in Saskatchewan and there population is growing but they are not this far north. Maybe one day they will be. Looks like the meal passed the taste test. You folks take care.

Great video! i wonder what the safe storage is based moisture content. Ive dehydrated meat in the air fryer but didn't know how long it would last. So, kept it stored in a freezer so in the event i was without power id have some meat to for a little while.
I’m sure the answer to that question is available…. I’m guessing the salt makes the process of moisture removal possible without any additional source…… and the smoke also helps preserve…….. but the meat can become so dry that it is difficult to use….. and canning takes care of that, and stabilizes the salt and moisture.

It stops the drying process and rehydrates it, makes it super easy to use and is totally amazing!😂😂😂😋😋😋

I was curious, what do you do with all of the leftover salt?
Reuse it till hot weather. Then use it as weed killer.
So, does that kills the boar smell??? Will this process work for uncastrated farm boar?
I haven’t done it to a big farm boar…… yet…. But I think it would work! I’m sure eventually I’ll try it!!!
