    A couple canning tips to try:
    1) your pressure canner might need a very light smear of Vaseline every few sessions to make it easier to pit the lid on and off.
    2) if your water is hard and leaves mineral deposits on your jars, put a splash of white vinegar in the canning water.
    3) try the Forjars brand of canning lids. If you like them (you will!) they probably will give you a discount code for your users. They really are very good and you can order them in bulk.

    That sure was nice looking meat you were cutting up and Cynthia was jarring. There are wild boar in Saskatchewan and there population is growing but they are not this far north. Maybe one day they will be.
    Looks like the meal passed the taste test.

    Oh, how i just loved every minute of this today Mr Mcgie. I savoured every moment yes I did. Cutting, salting curing, smoking and canning etc. You made my day yes siree. I just love looking at that chapel in and out. ❤😂And why do you need to can the meat if it's already salted cured smoked and dried??

      It stops the drying process and rehydrates it, makes it super easy to use and is totally amazing!😂😂😂😋😋😋

    Let's think about this a bit .. those wild hogs go through the farmers' fields picking out the best parts of the crop there. What wouldn't they taste delicious!

    Great video! i wonder what the safe storage is based moisture content. Ive dehydrated meat in the air fryer but didn't know how long it would last. So, kept it stored in a freezer so in the event i was without power id have some meat to for a little while.

      I’m sure the answer to that question is available…. I’m guessing the salt makes the process of moisture removal possible without any additional source…… and the smoke also helps preserve…….. but the meat can become so dry that it is difficult to use….. and canning takes care of that, and stabilizes the salt and moisture.

      I haven’t done it to a big farm boar…… yet…. But I think it would work! I’m sure eventually I’ll try it!!!
