I made your daal recipe earlier this week and it was amazing. I went to the Indian grocery store to get the spices for the curry powder and they were selling a clay pot like yours, so I bought that too! Tomorrow night I will try to make the chicken curry! Yum!!
Such a nice dinner. It's obvious from the way you scooped up a handful of rice , mixed the dal and salad into it and tore off a piece of fried egg and just surrendered to the joy of eating a simple Tamil meal. Quintessentially , you are true to your Tamilian roots. BTW the red dal is known in India as Masoor dal. For sambar we use Toovar dal (Hindi)or tovara parripppu in Malayalam.
I'd love one of those clay pots but not sure if I could use it on an electric cooker :( Also trying the chicken curry tomorrow. Got some fresh coconuts today, so let's see how my milk turns out.

@@lindabyrnes4356 usually we tap the bottom of the clay pot gently and listen for a nice resonance of sound. I have bought the clay pot with a high pitched sound. This test is to make sure that there are no cracks. This is the traditional way used in village markets. Pots we buy here are usually of good quality. I also just visually check for cracks. Also it’s recommended to use a wooden spoon with a clay pot. When the pot is new boil water in it several times to prepare it for cooking food. Gas stove is ideal for cooking in clay pots.
My dad had us on weekends, some holidays, in the 1980s it was around elementary school. He'd sometimes let us eat with our hands like some cultures but He let us do it because it was FUN as HEC..what was even funnier was the food was one of our most requested favs lmao mashed potatoes topped with a pool of spaghettios!😆😅 it was the BEST MEMORIES w my sister and dad. in North India this comfort food is called "Daal Chawal". Chawal is the hindi word for rice. We add tempering to the daal after cooking it - hot ghee (clarified butter), add finely chopped red onions and let them half brown, add pinch of asafoetida, cumin seeds and whole red chilly split in half. As soon as the cumin seeds go a bit brown add to hot daal, immediately cover the daal pot with a lid and let it sit for 5 min. Serve with hot rice, pickles and pappadoms. I can eat this and/ or curd rice for every meal for months and not get bored. If there's fried fish / fried aubergines or good ol potato fries with spicy massla on the side....yum.
In Trinidad and Tobago, we eat dal rice and bahji (cooked spinach) quite often. Trinidad has a large Indian diaspora population (35% i believe), so our cuisine has lots of Indian dishes (along with the lots of other races/ethnicities like African, French, Syrian, Chinese, Spanish, The list is long). I just made yours with the beautiful tomato salad and the Tamil-style egg. OMG, so fast and so delicious. A new staple meal in our house; thank you so much for sharing your family's secrets. Rajiv, Your videos are authentic and reflects your personality. Food looks good although I follow a plant based diet😉.. I love to cook, bake and even better to feed others. If you don't mind, can I please suggest you? That orange lentil is called masoor dhal. Yellow moong(green moong bean without the skin) bean/dhal and masoor dhaal will get cooked fast in regular pans. Other lentils and beans will take their own sweet time. If anyone is interested in moving from meat based to vegetarianism or plant based but don't know how to, I would suggest investing in a pressure cooker($50-100) that would solve 50% of the cooking hurdles. A rice cooker with steam basket for steaming vegetables is another good choice to buy. Cooking and eating healthier isn't hard. We all can learn about different dishes from people from different backgrounds and modify or eliminate to suit our personal taste yet keep it healthy. US tops the chart with respect to obesity. Thirty seven percent are obese another one third is overweight and only one third is in the normal range.
If you make rice and dal, fry fish and eat it with the dal and rice. It is so delicious. I also make khicdi and fry fish and eat it with the khicdi. When you fry the fish fry it the Sri Lankan, Indian, Pakistani, Bangladeshi way. Thank you, Rajiv for yet another helpful video.

A snug silicone cover for cast iron handles is well worth the investment. Mine is black and has ridges for safer handling. Getting one that is a tight fit is key -- you can easily trim its length to ensure it's a perfect accessory. This prevents me from grabbing a hot handle when I've removed it from the oven or using cloth near a gas flame as seen in this video. When you're cooking multiple items and return to a hot handle, it's not always your instinct to cover it, so the silicone has saved me from many burning opportunities. I remove it when heating the skillet at very high temps to reseason it because I like the handle to have a chance to breathe, but a HQ handle cover can withstand the higher oven temps. Loved this video -- that is a delicious quick dinner! -- and looking forward to more like this, especially a foolproof way to make short grain rice.

I had to make a substitution for the curry leaves and used fresh basil with a bit of lime zest and juice, but everyone at my house is eager for me to make this again so I will have to go on the hunt for curry leaves sometime very soon. Hello Rajiv, this is the best meal in under 30 minutes I've made for ages! Tried a few Dahl recipes and this is the least complicated but tastiest by a long way. Egg on top is also superb!! Much love.
I went on this crazy diet earlier this year where you only get to eat 1 particular thing for 2 weeks. I opted for daal (though it was a north Indian style recipe), and even though I really missed crunchy foods and coffee, I never got sick of eating daal. Anyway, since I watched this the other day, I warmed up my soup bowl on the adjacent burner- nice tip!
This is our comfort food too (minus the salad) and I'm from hyderabad, India. We add chilli powder to our lentils too along with fennel seeds and tomato.
Rajiv, the food looks delicious! I have a practical question: how would one pull pieces off of the fried egg with only one hand during a traditional meal? I'm interested in learning the correct way because eating with the right hand (no fork) seems to be part of the comfort of this food 😊

My favorite egg dish was egg podimas. It was scrambled eggs with spices and onions and chilis and probably some other stuff. It was very good. I love daal. That tomato salad looked delicious, although I think I'll try using greek yogurt instead of mayo.
