It's funny you said that about how hot Greece was. I'm from Florida and went to Greece back in 2017 and imo Greece felt like home, it was a European Florida minus the humidity.
I use a combination! When I arrive to the airport, I usually take money out of an ATM. I use the cash for food/souvenirs/ small purchases. But let’s say I want to do something bigger (maybe a one time purchase over $75) I’ll use a credit card. I have chase sapphire which has no fees on international purchases.
I think it depends on the country and how much you like to shop, but I usually budget around $60/$80 a day for food/drinks/random things and some days is more and some less. I’m not really a souvenir buyer so I don’t think about budgeting for that. I’m also somebody who will charge a credit card with some thing that just came up out of the blue that day (like an excursion or event) because I will find a way to pay for it eventually (😂🤷🏽♀️) and experiences to me are priceless.

What was the age ranges like on your trip?
It depends. My European trips were more 18-24 and my Thailand/Iceland trips were more 23-28.
