There are two types of projection:- parallel and perspective,
Parallel projection also have two parts:- orthographic and oblique
Orthographic:- multiview and axononetric
Axonometic:- isometric, dimetric, trimeric
Oblique:- General projection
General projection:- carvalier and cabiner

How is center of projection point different from vanishing point
center of projection is the real center of projection whereas vanishing point is assumed to be center of projection.
