You must be very lucky for flying with two heavies of Turkish Airlines (A340-300 and the B777-300ER) :) As far as I know, they fly with A321-200's to London. But a great video as always!!
If you see the video when the plane is parked this small portion of the wing like a rectangular is down then when the plane is going to take off this rectangular small part move down and sometimes vertical , then with a plane flying this part move up and down up and down I think the function is to keep the plane complete horizontal o turn right or left according to the pilot. If you see the video is easy to see because is moving up and down constantly. Thank you.

A330's, A340's & 777's from Istanbul to Heathrow are normal. There's 4 daily Turkish Airlines flights to Heathrow 2 of which are A321's the other 2 are heavies. Either A330's, A340's or a 777.

Desca You're talking about the Aileron, they are a flight controlling surface which is used to help the aircraft to roll
