Kombucha SCOBY Attempts To Climb Out of Fermentation Jar

  • The Kombucha SCOBY sometimes climbs out of the jar, and when that happens, we get panicked questions about it! The SCOBY (or pellicle) is a cellulose matrix created by and covered in bacteria. Rest assured, it does not have legs and cannot actually climb out of the jar to escape!

    When learning how to make Kombucha, you may find all kinds of unusual things happen. Each of these strange events offers a glimpse into the Kombucha brewing process. A Kombucha SCOBY and Carbon Dioxide (CO2) build-up can do strange things!
    The living energy of Kombucha SCOBYs and Carbon Dioxide combine for a WEIRD and wild culture movement. The SCOBY levitates by way of the CO2 produced by the yeast and wedges itself into the mouth of the jar, creating an airtight seal. It is common to see the SCOBY a bit elevated above the Kombucha tea (though usually not like this!), but all you need to do is gently poke it back down so the SCOBY will return to normal fermentation.

    that SCOBY might have taken over the whole city by now

    I have a scoby that fidgets: in the last week, it's gone down, it's gone up, it's gone down, it's gone sideways, and today it's kind of in the middle of the jar, and has gently somersaulted. Maybe tomorrow it will make a break for freedom? I'll keep an eye on it. And a whip and chair handy. Just in case.

    Getting the grains out of my diet, and adding kombucha and kefir water really helped my abdominal discomfort and gave me a huge boost of energy! It is the best ever!

    Poke a hole in the center of the SCOBY so carbonation can't be trapped underneath. And you must keep the hole open because the SCOBY growth will close it.

      Interesting strategy! The hole will fill in over time as you observed. That's because the SCOBY is sealing the surface to prevent pathogens from entering the brew and creating an anaerobic environment for continued fermentation.

    it sealed against the side, and the release of CO2 pushed it out. they can pop out sometimes. trim off the side of the pancake to prevent

      Even if you trim it, the new layer will grow to fit the entire surface area.

    I've had a SCOBY pop out of my gallon jar overnight recently. It pushed up the fluid trapped in top and when the coffee filter got wet from it, I had kombucha wicking all over my countertop. Ack!
    I push them down morning and evening each day now. I also have to cut some partly with scissors to avoid this.
    But yes, I've had some major climbers too!

      I had the same problem! I used this muslin (see-thru curtain material) and it went all of the counter and floor. Now, I poke a 1/4"-1/2" hole in the center so the bubbles can escape but you must keep the hole open since the SCOBY growth will close it. (like ice fishing lol) I also taste test thru that hole with a straw. I still push them down daily to keep the top wet. I wonder why do some have this doming-up issue and others don't?

    Yes, that happened to me once. It was with a huge two gallon jar. The mistake was that I filled up the jar too much.
