Italians don’t use a lot of garlic. Eva of Pasta Grammar can attest to that. She cooks with 1 clove of garlic in her red sauce and she fishes it out after it turns fragrant in the pan with olive oil
This was great, found myself debating why carmen didnt follow the note as well as the whole onion thing. The basil oil was really not clear from the show and internet so i ended up burning the garlic 😅 will try again with your way!
I dunno maybe there was a slight bitterness but it really helped to balance the sweet ness of the basil oil all i know is that i feel great and I've got a new idea for a business hear me out it's called coffeeshare you know that extra cup of coffee in your pot that you never get to what if a neighbor that passed your house on their commute could pick it up we could make millions and save the planet from wasted coffee!

lol @ the cash. but i wonder if letting the onions simmer longer in the oil then semi-pulsing it into the sauce would be any good
Most definitely. I'm just not sure how different it would be from cooking minced onions for a shorter time.
Don't forget, Carmy was a sous chef at a three Michelin star restaurant, not just a sandwich cook.
