  • Panurong- surong is a ceremonial dance of farmers in Capiz during harvest time. This ritual was popular during the early Spanish time but is becoming extinct due ot hte advent of modern and scientific
ways of farming. The farmers refrained from eating their yield without first observing this ritual. Native delicacies such as biko, bitso- bitso, suman, puto, bibingka and inday-inday were prepared as an offering for a good harvest to the anitos and to appease evil spirits. These native delicacies were thrown here and there supposedly to the anitos as an offering. Some are placed on an altar. The dance Panurong-surong starts when everybody attending the activity si already a bit drunk from the native wine tuba served with the rice delicacies.
This spirited dance is accompanied by the stamping of the feet, snapping of fingers and clapping of hands by the dancers and the cheering and hand clapping of the onlookers.
