    Ingredients
    2 boxes spiral pasta of your choice
    2-3 bunches chopped spinach
    2-3 bunches chopped fresh dill
    1 steamed bag of frozen mixed vegetables - peas, carrots, green beans
    1 of each bell peppers - red, yellow, orange
    1 large cucumber
    1 medium zucchini
    2-3 medium containers of silken tofu
    Maple syrup to taste
    Apple cider vinegar to taste
    Method
    Boil pasta until el dente, drain and rinse in cold water
    Add pasta to large bowl
    Add all ingredients above except dill, tofu, and apple cider vinegar
    Combine ingredients well
    Add tofu, apple cider vinegar, and maple syrup to blender and blend for a minute
    Add more vinegar, maple syrup, dill to taste
    Pour sauce over pasta until well combined
    Chill in fridge for a couple hours/preferably overnight
