- Get creative this Holiday Season with my Christmas Cupcakes!!
*** I apologize for an error type in the video subtitles regarding the amount of sugar: I wrote 100 grams instead of 200. The right amount is 200 grams (1 cup) of sugar. I'm truly sorry for this oversight.
Ingredients for 12-14 cupcakes:
200 g (1 cup) granulated sugar
170 g (1 1/4 cups) all purpose flour
50 g (1/2 cup) dark cocoa powder
1/2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
120 ml (1/2 cup) hot coffee
120 ml (1/2 cup) boiling water
120 ml (1/2 cup) vegetable oil
2 medium size eggs, at room temperature
Bake at 160 °C (320°F) for about 20-25 minutes or until a toothpick inserted comes out clean.
For the frosting:
200 g (7 ounces) cream cheese, cold
250 g (8.5 ounces) mascarpone, cold
180 g (1 1/2 cups) powdered sugar (you can add more, until it's as sweet as you'd like)
1 tsp vanilla extract
red and green food coloring

Zucchero: 200 g - chiedo scusa, nel video c'è un errore di battitura, ho scritto 100 grammi invece di 200.
Farina: 170 g
Cacao: 50 g
Sale: mezzo cucchiaino
Lievito: mezzo cucchiaino
Bicarbonato: 1 cucchiaino
Caffè bollente: 120 ml
Acqua bollente: 120 ml
Olio di semi di girasole o di mais: 120 ml
Uova: 2 a temperatura ambiente
Ingredienti per il frosting:
Formaggio spalmabile freddo di frigo: 200 g
Mascarpone freddo di frigo: 250 g
Zucchero a velo: 180 g
Estratto di vaniglia: 1 cucchiaino
Coloranti in gel (io ho usato Colorgel verde prato, verde bosco e rosso ciliegia): quanto basta
Note: cuocere a 160 °C per 20-25 minuti (i tempi dipendono dal forno) fare sempre la prova stecchino!

Do you add 1/2 cup of boiling water to the 1/2 cup of coffee? Or is the boiling water and coffee the same thing?
Hi Johnny! I mixed them together: 1/2 cup (120 ml) coffee and 1/2 cup (120 ml) boiling water.
Could i use any other oil instead of vegetable oil?

Thank you! ❤ If you use high quality cream cheese and mascarpone and if you follow the instructions, the stability of the frosting is guaranteed. if you prefer, you can decorate them with buttercream 🤗

Do I have to put it in the refrigerator ? I am afraid that the cake melts.
Hi Nicole! The safest way to store cream cheese / mascarpone frosted cupcakes / cakes is to keep them in the fridge. I don't recommend keeping them at room temperature for more than 2-3 hours. if the frosting is well beated, it will be stable.
Please look at the description box, the right amount of sugar is 200 grams, there is an error in the video subtitles.

@@nicolechoi1382 sorry Nicole, I only see now your comment. I'm glad you tried the recipe & liked it. I honestly find these cupcakes to be super moist. Eventually you could try to add a little more oil, maybe 50 ml. The oven temperature is also very important bc if is too high, the cupcakes may dry out too much. I always bake them at 160 ° C 🤗

Hello Michael! You could replace the coffee with boiling water. So instead of 120ml coffee + 120ml boiling water, you will use 240ml boiling water. Please read the ingredient list on the description box! Thank you

Hi! You can try to substitute the 120 ml of oil with 140 grams of melted butter and use 100 ml of boiling water instead of 120 ml. Happy Holidays! ☃️🎄❤

Hi dear! 😊 Yes, I did the experiment and they turned out BEAUTIFULLY!! I dare say they are better than those with eggs ... the only variation I made was to replace the eggs with mashed ripe banana, one banana for each egg. I did half the dose and a vegan chocolate frosting. If everything went well with the shooting, this week I will also post the video recipe. Thanks for the inspiration! 🤗❤

Can you use large eggs instead of medium?
Hi! A medium-size egg without shell weighs about 50 grams... you could beat 2 large eggs and use 100 grams. Please look at the ingredient list in the description box, because there is an error in the video subtitles: 200 grams of sugar is the right amount. Can we add something else instead of eggs
Hi Krisha! I never tried to make them without eggs. You could try to replace the eggs with 2 ripe bananas and slightly increase the amount of flour by adding another 3-4 tablespoons but I cannot guarantee that they will turn out perfect. I would like to have time to give it a try, if I can do it before Christmas, I'll be back with an update 🤗
