When I worked in a local chippy I used to go in on a morning and salt the fish on both sides. It prevented the fish curling up at the ends while cooking.
Best looking homemade fish and chips ever. Beats Ramsay's and Pierre White's hands down. If you don't believe me, watch their vids. Already planning this for our Saturday tea. As always, thank you.
Cheryl, your recipe videos are so great! Here I am, past my 60th birthday, and I had never thought to add malt vinegar to fish batter! (I blame it on not being raised in Scotland! 😁)
When i was training to be a chef we were always told that batter is better when it is fresh i have found batter that has been left for too long just looses that nice crispy coating due to the beer going flat so i would disagree that leaving it longer is better , also you can use self raising flour instead of mixing plain flour with baking powder thats basically all self raising powder is .... I would also blanch my chips at 130°c first whilst i was getting the rest of the dinner ready then finish them later at 180°c just before they are due to be served
Great recipe and looks awesome. Try putting a tablespoon or two of sugar into the water that you soak your chips in. I've found that it gives them a nice crispy outside. And I think it sweats out the starch without adding any sweetness.
I recently found out how good corn flour is for coating. Not corn meal, but corn flour. I know now that's what they used on the fish at a favorite restaurant we went to when I was a child.
Hi Cheryl, I made this for the first time tonight for tea and it was the most enjoyable fjsh and chips I've ever tasted. I'm afraid the local chippie is going to lose out big style! Thanks so much for all your recipes. X
Thank you for your beginning comments Cheryl. Im home with Covid (in NZ) and was feeling a little sick of it all, You cheered me up and reminded me that we belong to all sorts of communities that are just a comment away, I love this one :-)
Hi there. I love all your recipes. I have served up right many of them. But just to share a few thoughts on potatoes. For chips, red potatoes are waxy and therefore the end result is crispy & crunchy. Brown potatoes are starchy. To get a chip that has a light crunch on the outside and is heavenly soft on the inside using a brown potato. You pointed out the need to rinse some of that starch out, well done, that is the secret. *I agree with the commenter who said your chips beat Ramsay's. In the states King Edward potatoes are called Kennebec.
That looks fantastically tasty. When I lived in England, my favorite was eel and chips (only one bone to work with). Did Jasper try to "help" with the fish prep? ;)
After almost 20 years in the states I decided I need to learn how to make these myself 😂 I can’t wait to try this recipe - only one I’ve seen that looks close to home
CHERYL!!! These are the best fish and chips I’ve ever eaten and I MADE THEM MYSELF AT HOME IN THE STATES this is INSANE. Anyone wanting traditional Scottish fish and chips this is the one to try. I’m going to need a personal trainer 😂
Sat here watching this at 9.45 at night and you have got my mouth watering will definitely be giving this a go the batter sounds lovely never tried beer batter x
I am on the East Coast, where it is relatively easy to get. Not as good as in England, although I did find one place that has a huge fillet. But they don't do the Friday night fries like they do in the Midwest
Just saw a recipe for crispy oven sweet potato fries from Spain. It involves soaking the potatoes for 40 minutes in water after chopping them then dry namana towel then baking them for 40 minutes to an hour. It was crazy how long it took. Easier to buy the frozen ones and fiddle around with technique until they get crispy
I never thought to add vinegar to the batter. I am going have to try that. I love malt vinegar... I could drink the stuff. Your fish and chips look delicious!
I've been looking everywhere for a decent batter recipe and this seems perfect. Strangely you're the first person I've seen putting malt vinegar into the batter mix. Quick question - if you don't have/want beer for the batter can you just use carbonated water? Or maybe something else?
If you like your chips soggy/soft like they serve in fish and chip shops then put them in a paper bag to steam for a while. It's the paper they serve them in that makes them soggy.
Hi. Dying to try this out as, living in Spain, miss my fish n chips! Liked that you used beef dripping as that was what my mum always used to fry with. Just one question, if you wouldn't mind - what fryer are you using? It looks a reasonable size as I have found them some are far too big! Thanks
Looks so good. Have you tried the beer battered cod from waitrose probably not as good as yours:) but it's the best I've had from a supermarket I normally buy 4 boxes and freeze, it seems to go like hot cakes.
hiya. going to try yr fish recipe as looks lovely but as for the chip you should do triple cooked chips their amazing.or part cooked yr chips, then the fish then finish the chips so the fish doesnt dry out. love yr channel.x
Good one, Cheryl. Great timing too. (Fish Friday tomorrow) Basically how I do mine. But I wouldn't waste beer on my batter. Lol. Cheap supermarket lemonade is good enough!
That looks really good. Imagine those poor people running around the field with the cows and their wee buckets to catch the beef drippings on a hot day.
The fat I used was beef dripping...forgot to mention that in the video! :)
Brilliant!
Where from?
I use half & half (lard and veg oil) for deep frying but would prefer proper beef dripping .
@@paulmercury6571 Cheryl bought it from Tesco, it’s in her last shopping haul.
@@DeborahScotts153 a large amount of it!
don't use veg oil for deep frying, it becomes toxic @@paulmercury6571
When I worked in a local chippy I used to go in on a morning and salt the fish on both sides. It prevented the fish curling up at the ends while cooking.
I’m American, but went to England on holiday. The fish and chips were the one thing that I remembered the most. Amazing.
I love that you explain why you cook things a certain way. I have learned a lot from your tips. Thank you

Thanks for continuing your content. Watching you helps to cope with the stress in the world.
Your wonderful scottish accent always cheers me up. Thank you for that. Hope you and your family are safe and healthy as well.
Oh that looked Braw Cheryl! Know what I'm having for Saturday nights tea !😍Smashing 👍
Your fish and chips looks beautiful! What a beautiful video to take our minds off the sad times we are currently experiencing 👍🏻
Im so glad you say add a good tsp of salt, a pinch is worthless!!

Looks lovely 👌🏻 Greetings from Scotland 😊 Have a great day 🌻🌞
Good evening Cheryl. Lovely to see you 👀, with these fish and chippies. Oh yummy 😋 delicious. This is my idea of heaven. Thank you ❤
Hi Cheryl, I made this for the first time tonight for tea and it was the most enjoyable fjsh and chips I've ever tasted. I'm afraid the local chippie is going to lose out big style! Thanks so much for all your recipes. X
That all looks wonderful. Never thought to rest the batter.
Lovely fish and chips, just in time for Friday! In the black country they batter the chips as well, not quite fattening enough without. 🙂
My mom used to make beer battered fish with fish they caught in Florida. It would either be Bass or Perch, it was sooooo good.
Southern California here. Thank you for this recipe and tutorial. Nothing better than good fish and chips. Definitely giving this one a try.
Great job on the fish and chips. A great inspiration!
Made this wonderful batter yesterday, used on Walleye and Halibut. Absolutely the best batter fried fish we have ever had. Thank you so much!
Them fish and chips look absolutely delicious Cheryl, everything you cook turns out great, l think you have the magic touch at the cooker.😋👍👩🍳
I just learned how to make good fish and chips. Thanks so much
Cheryl I love your meals inspiring
I use my own homebrew beer for the batter
Great idea using box
Late for the big plate but staying for the leftovers. Brilliant mate
Omg! I’m salivating. Best fish and chips I’ve seen and especially being cooked in beef dripping! Yummy 😋

That looked great Cheryl. I have an unused deep fryer, maybe time to take it out. Thanks.
Sat here watching this at 9.45 at night and you have got my mouth watering will definitely be giving this a go the batter sounds lovely never tried beer batter x
That looks amazing Cheryl. I'll definitely give this a go! Thankyou x

This looks absolutely amazing ❤️
Looks delicious love crispy fish 👍
Thank you! I live in Southern California and there aren't any places nearby to get fish and chips. Used to but not so much now.
I am on the East Coast, where it is relatively easy to get. Not as good as in England, although I did find one place that has a huge fillet. But they don't do the Friday night fries like they do in the Midwest
Definitely a recipe for Scots overseas (like me) because we all know much easier just going to the chippie 🤣

Going to try the vinegar in the batter next time, never heard of that before.
My absolute favourite (Im not even a pensioner!) when we go out its always fish and chips!!!!
Great, easy to follow video with superb results.
Looks lush £8 50p for a fish supper here in Fife so much cheaper to make yourself oh and tomato sauce

Looks fantastic! Coincidentally, also had fried haddock & chips tonight.
So good! :)
Great video Cheryl I’m watching at a little after 6 am and now I know what’s for tea tonight. Thank you👍🎅🏻
How yummy!!!! The fish came out so perfect!

Quick question - if you don't have/want beer for the batter can you just use carbonated water? Or maybe something else?
This fish and chips looks tasty, going to try this Dinner 😋🇮🇪♥️
Brilliant, definitely doing this.
we always put a wee bit a bic carb in the batter also i like to par boil my chips i find the middelo more fluffy
Lemonade instead of carbonated water works well....and lemon goes well with fish.
I make fish and chips at home the best. But nothing beats F&C from the Chipper yummy 😋 love your videos
Wow! That looks like it's just came from the chippy, It looks amazing! I will have to try that fish for sure! Thanks for this :)

Looks beautiful will be trying this. Where did you get the takeaway boxes from please
Good one, Cheryl.
Great timing too. (Fish Friday tomorrow)
Basically how I do mine. But I wouldn't waste beer on my batter. Lol. Cheap supermarket lemonade is good enough!
Not a beer fan so this is exactly what I needed. Thanks for the tip!
great recipe! 👍 but what to use for beer replacement?
The alcohol is evaporated with the cooking process, if that's a concern. I think she mentioned that plain soda water can be used in place of the beer.
That looks really good. Imagine those poor people running around the field with the cows and their wee buckets to catch the beef drippings on a hot day.
Yes! I can see it clearly😂
Looks delicious
Absolutely awesome. What do you think of these air flyers?
Vinegar in the batter is a new one on me but I’ll be trying it tonight.
Cheryl, I’ve made your steak pies several times and love them.
Hiya Cheryl. Ooh I got quite nervous watching your fingers get so close to that hot oil! Deep frying scares me! 😳
The end result did look great tho 😋
Where did you purchase your haddock loins??
Supermarket or fishmonger??
Tomato ketchup is a addition too. Probably the vinegar that does hts magic.
