    I made this today. Eating my first slice as I make this comment.
    I went with 1/2 hard white and 1/2 hard red. I also used lecithin.
    This bread is DELICIOUS!
    I am brand new at milling. This is my second time making bread with milled flour and I feel like a professional, thanks for all of your videos!!! ❤
    (My first bread was a Becker recipe which was delicious too. But this one is better)

      Thats the thing...bread baking is very forgiving. I never measure my ingredients. Intuition only. Its art really.

    I’ve been a bread baker but I have never done it from the beginning with me grinding my own flour. So I am so glad that I have found you you’ve been a wealth of information thank you for doing these videos. I’m feeling more confident doing my own flour thank you. I did watch your pancake video and I think you and I may have the same oven. Mine is also propane has the griddle in the middle but mine is white or yours is black. And I love my old oven. 🥰

As far as my oven, it’s not “old” it’s just one that doesn’t need electricity at all. It’s battery powered for the pilot light. Quite handy when there is no power, but it is a very basic oven and doesn’t regulate temp as well.

    I have been grinding my wheat and making bread ever since I saw this video three months ago. My husband and sons go absolutely nuts over it. So do my friends.They get so disappointed when there is no bread on the counter. I have a kitchen aid grinder attachment and dough hook and its so far working very well for me. Thank-you so much for sharing this bread recipe, it is the absolute best!

      Thanks Earl! I think I replied to one of your other comments, but you can definitely mix a hard wheat with rye. I would start with maybe 2 cups of rye flour and 7-8 cups of the hard flour in this recipe and go from there. Rye can be a bit dense.

    Oh my goodness, I can't wait to try your recipe! I have only been making bread for about 6-7 months and, while it has a nice crumb, it never gets sandwich bread size but my recipe only calls for 6-6.5 cups of flour and 1 tbsp of yeast! This might be a game changer! Thank you!

    Great recipe! I appreciate the video….I’ve made this several times now. The only thing I’d say is a second rise seems to work well and makes a noticeable improvement in the crumb. Delicious either way!!

      Yep! You can! And fun fact: bread flour from the store is made from hard red wheat. So "technically" I AM using bread flour. Just whole and intact :-)

    Girrrrl!! you were my missing link! I'm just learning about all this. Came across Breadbeckers 4 weeks ago, started my Joseph's storage room. Got my wonder mill and Ank Assistant in the last 2 weeks and could not figure out WHY the bread wouldn't get higher then the pan!! Found you and been binge watching down to your fabulous bread video and tonight after work I could not wait no longer to try it out. It's in the oven as I type this, at 25 minutes...and I was amazed just putting it in the loaf pans....I am in awe watching it thru my oven window.     I finally made your simple whole wheat bread recipe, I must say it was a great success. I’ve been milling for about 30 yrs & have always made a 50/50 bread. Well not anymore. I grew up in Florida & know how the humidity plays with your bread, I now live in Utah, 4600 ft above sea level & that s a different way of making bread. Whole wheat is the only way to go, thanks for your delicious recipe

    I'm glad I found your channel. Currently I make keto bread in a bread machine, but I want to also make regular bread from milled grain in the oven. I like the keto bread but it requires a lot of specialty ingredients that may get too expensive or hard to find and don't have much shelf life.
    My previous attempts using whole wheat flour yielded dense and barely risen loaves. I was sure using some milled at home would be even worse.

    Hi there ! I have the Bosch Compact which I love. My main goal is to make my bread by hand. I have purchased hard white berries and the Wonder Junior Deluxe grain mill, which I haven’t opened yet. My main reason for wanting to learn to grind my own wheat is in the case of a grid down situation, I will be able to do that. We never know when a crisis may be upon us and that’s very concerning to me. I’m all about having electric gadgets though. I have an Ankarsrum mixer, the small Bosch which I’ve made 3 loaves in, 2 different Bamix immersion blenders, etc. but with no electricity, I’d be out of luck. So I’m planning on diving into the manual bread making world. Great video and thank you for sharing your expertise !! I’ve subscribed to your channel and look forward to watching more of your videos. 😊

    Oh my goodness! I couldn't believe how much my loaf rose.My first really good 100% whole wheat loaf. Now if I could manage a good 100% brown sourdough my life would be complete!!

    This may have been made over a year ago but i just used it today and it's perfect. It's hard to find a recipe or a video for freshly milled flour but this is top notch.

    I made this this afternoon with freshly milled Kamut. I am almost in tears! Lol
    This is literally the best bread I have ever had in my entire life!
    I was going to serve it to my grandkids with butter and honey, but we didn't need the honey at all. It was amazing. The kids scarfed it down!
    I did make one mistake that you mentioned and slightly undercooked it. The center was a little doughy. But that's ok... we'll get it just right next time.... and it was so yummy we ate the doughy part too!!
    Can't thank you enough. You've helped us take a huge step in our quest to get off store bought bread!

      Thank you for all the comments! I’m so excited for you getting your first mill! I started this channel because I know when I first started I was slightly overwhelmed and also disappointed with many failed recipes. I wanted to help others not make all the same mistakes I did and give up milling their wheat. I think that’s why many people stop - because it’s not super good and able to compete with store-bought bread 😀

      I’ve been milling grain now and again at a friend’s place for a few weeks now and I am blown away by the wonderful effect the little bit of bread we are eating has had. Now that I have my own mill and don’t have to travel 20 minutes each way to grind my grains, I hope to feed LIVING BREAD to my family each day.

    Thank you for sharing this simple recipe for freshly milled whole wheat berries!! I am new to milling grains and have been looking for a simple recipe for months. I made this today and it turned out wonderful on my first attempt. My husband loved it too! I do not have an electric mixer so I made this bread by hand, still checked my dough with the window pane test. I also used coconut oil.

    I can't thank you enough for this video. I've been making bread for years and its always hit or miss. You helped to answer a question of mine as to why my loaves sometimes fall flat, so I will definitely head your advice. Also, I have been wanting to make bread from whole grains and have purchased some Hard Red Wheat and will be giving it a try this weekend. Thanks again for this video!

    I’m a newbie and have made this recipe twice now and it’s turned out delicious each time. I appreciate how you give us the measurements of the grains to grind in addition to the flour portions because sometimes the math is just too much for my brain to calculate!! 😂

    This is such an awesome never fail recipe that I decided to try it using fresh ground Ezekiel flour. I made 4 1lb loaves like I do with the wheat. It did not rise as high but is still delicious! Moist nutty and a little honey sweet. Thank you so so much for this and all your recipes!

    You are a life saver, can not say it enough but thank you, thank you….I purchased 50 lbs of hard red wheat and soft then I made my first loaf and OH MY GOODNESS, it was not at all the same as using all purpose flour, but your video helped me. I’m going back to watch all your videos. Today I tried your recipe and my loafs came out delicious and huge. So happy I found you.

    I had been using the popular Bread Beckers basic dough recipe, but this uses fewer ingredients and takes less time! Also it turned out less crumbly and sliced beautifully. (I used 100% organic hard red winter wheat).

    So, 15 months after I first watched this video, my comment is FINALLY, a helpful video for home milled whole wheat bread! Thank you for creating the video for hand kneading as it has worked well for our hard red/hard white/spelt sandwich bread and buns for over a year. We had the grains and Mockmill for some time but this video vastly helped the final result, especially the fold & roll before placing in a USA pan. We saw health benefits rather quickly and hubby purchased an Ankarsrum which arrived today. Hurray! Now we have a new learning curve. Blessings Felicia. 🙂

    Oh my heavens! My Grandma used to tell me to ‘trust your gut’ (aka intuition). I have been failing at my bread with my freshly ground wheat. I kept thinking, it’s ready now, but punched that dough down and shaped my loaves. THANK YOU!! My bread is once again a success!

    Finally!!! Just made this from hard red wheat. I use a Nutrimill Harvest. Anyway - bread rose ands is soft and perfect!! I have tried several recipes before - ended up with squished dense bread. Thank you!

    I had commented the other day that my loaves rose to much and what seemed to be to quickly. So I decided to try again because the bread really did turn out well it just was twice the size of my pans. Second time I cut recipe in half but still made 2 loaves and it turned out PERFECT! LOVE this recipe!

    Oh my Goodness! I have been trying to get my fresh milled bread to turn out better than a crumbly hockey puck for almost 2 years! This worked great! I don't have a mixer or an electric mill - I'm trying to perfect it without the use of electricity, since we either won't have any due to the solar flare or it'll be too costly to afford here soon. LOL I do have a hand mill, Wonder mill JR., and my own hands I used to knead. (I think that was the trick). It has taken a bit to get my hand mill stones ground down to where they grind the grain well. I used to have to send it through a couple times before it would be fine enough. This is strenuous work, but if you are aggravated at something or someone, it can be a great release of pinned up stress. So instead of getting angry at the situation, you can just say "I'm gonna go bake me some bread!". (And say it with conviction! LOL) Or just a good work out for upper body! LOL
    Thank you sooooo much! I'm so excited! I want to try it for pizza dough next!!

    I started milling wheat 2 weeks ago and couldn’t get my bread to rise. Your tips for proofing the yeast and folding the dough made a huge difference. I baked an edible loaf of bread today!!! I still need more practice but I’m on the right track now. Thank you for the great video!

    Made this today! Super delicious. I broke the rules and cut it immediately and ate most of it (with help). Sooooo good. I made a cumin lime olive oil dressing to go with and it was amazing (with fresh ground cumin seed haha)
