    Kenji, I got the Kan knife about a month ago based on your recommendation and have been well pleased with it. Barney Lund emailed me within 3 hours with a picture of my knife packaged for shipping with the mailing label on it and was super attentive. Great experience with the knife and the company. I hope they come out with a Nakiri soon because I WILL buy it (Hint, Hint, Barney :-). Thanks for showing these products and getting the companies to donate to the causes.

      I got 3 of the 13oz ones after seeing Kenjis vid too.
      It wasnt cheap getting them shipped to UK, but Ive already had a lot of use out of them (grilled cheese, burgers, tofu). Love them

    OXO also makes a great salad spinner. It's a game changer by never having to buy salad kits again

      You are exactly right. We had a crappy spinner that resulted in us buying much more pre-washed leaves. Got the OXO spinner and have not turned back. Plus those pop-ups are excellent.

      Kenji loves a good salad spinner for drying lots of different things too! I bought the one he recommended and I don't even use it to make salads.

    Hey Kenji, I think this is an awesome idea. But I just tried ordering some things from OXO using the code, and it added a "shipping" cost of about 30% (shipping was $0 before adding the promo code).... making it more expensive than if I just ordered without the code and donated separately. I have a screenshot if you want it.
    I'm assuming it's a mistake of some kind. Just thought you'd want to know.

    I was just looking at buying that kitchen scale and an accessory set from Early Wood. I'm glad I held off so now I can get what I want and have a portion of it go to a good cause.
    Question: Do you think those Baking Steel griddles would work on an electric stove top? I love the idea of having a large flattop like area, but it seem like only gas stoves get to have that kind of fun.

    Just received the Kan Kitchen chef knife. It is exceptional on another level than all other chef knives I have used. The purchasing experience was excellent. Barney contacted me right after I ordered to let me know it would ship the next day. I could not be more pleased.

    Just a heads up, but I do not think the OXO code is implemented correctly. When I enter it my total goes up by 15%. Hopefully, it gets fixed soon and they get those measuring cups back in stock. Great idea and I'm sure it will raise a lot of money for some good causes!

    Ended up buying a Kan knife, seemed like an extremely nice one. I was greeted on their website by Barney himself in the website chat. Fairly sure it wasn't a chatbot (inb4 Turing test) since we had a long chat over there, but gotta admire their devotion to customer care and relationships. Can't wait to get my hands on one of their knives, I bought the 67-layer one with ebony handle.
    Thanks for the recommendations Kenji and cheers to Barney Lund as well for outstanding effort. Can't have a better sales pitch than having the company owner answering your questions in an online chat.

      I believe he's mentioned at some point that either someone made it for him or he got it off a friend/acquaintance. I am surprised how hard it is to find a similar one to buy... they're all always round and the lids typically come off completely or swing horizontally instead of flipping open.

      @@zerxer That same Etsy seller has a darker color that comes with the hinge. If you're interested in the lighter color it may be worth it to shoot the seller a message to see if they would put one on for you.

      @@EG-tw1kj thanks! I just noticed the dark one with a hinge and didn't realize it was the same seller. I will probably get me one. I'm using some cylindrical glass container now that has a metal latch on it, but having to undo the latch isn't as nice, and the open lid is too heavy for it when the salt is low.

    Could you expand a little more on why you keep your baking steel in the bottom of the oven? I’m thinking of buying one as I make a lot of pizza (with your no knead dough recipe lol). Does it make your oven heat up any faster than normal? Or does it get any hotter? My oven only goes to 500 and I’ve often wondered if there was an easy way I could increase the temp slightly

      It makes it heat up more slowly but it maintains more steady heat once it does.

    It seems that OXO code increases the total cost of the order, and increases it by almost 20%, rather than indicating that the existing order has a 15% donation.

    Kenji! I'm a big fan of yours! I've already purchased all of these products with the exception of the knife! OXO is the standard of standard, well thought out and efficient products! I have several including, most recently the small salad spinner, silicone measuring cup set, the 5lb scale, and the skinny jar spatula, all excellent workers! Earlywood is beautiful as all get out.. I own a large saute and a tera scrapper... as lovely to use as to look at! The chef's presses are great for even browning on grilled cheeses... and... queso birria (though, I substituted your chile verde!)! The piece de resistance.... the Baking Steel mini griddle has elevated my pizza game to heights I only dreamed of without owning a ginormous oven... funny enough I just returned from the grocery store with ground beef... smashburgers are next! Oh yeah, The Food Lab will remain the ultimate reference book in my kitchen!!! Thank you so much for the recommendations, constant videos / ideas and for being a stand up person who cares about fellow humans! Your grandpa... and family, is proud! One Love!

    What are your opinions on high end Japanese cutlery, i.e. handcrafted gyutos? Is there a reason for you using the KAN instead of a Japanese gyuto? I can see the element of versatility being a big factor as it's made from VG10 damascus (right?) and has a more durable grind, but I myself am a sucker for laser-type Japanese knives. Is it a matter of personal taste or are there other reasons? Would be awesome to hear your take on this!

    Is that Souped Up Recipes’ wok on your stove??? I got one a couple of months ago and absolutely love it. Perfect size and shape for home cooking.

    I love cooking and want to know more however i never want to do it as my job for life, knowing this it hurts me occasionally because i have worked in restaurant jobs and some of the videos i watch about cooking id love to cook beside them at some point to learn something and or have the experience.     Which configuration of the KAN knife do you recommend? Hammered vs non-hammered blade, and different handles?

      I feel like I'm in a position to answer this. You'll probably be as happy with one as the others, but you need to take especially good care of the ebony wood handle. None should go through the dishwasher, and please dry the blade soon after use in all cases. The hammered finish is both aesthetic and useful, helping with food release, though the difference is very slight. Our hammered/ebony variation is by far our most popular.     The BakingSteel company doesn't get credit for coming up with using steel plates as pizza baking surfaces for home ovens. They decided to monetize the idea after they read the idea in the Modernist Cuisine book, which got the idea from the old infamous eGullet forums in 2007. Genesis forum post:

      In his book The Food Lab, he mentions keeping a jar of it by his saltcellar. Page 245 of my ebook copy, it's in a section titled "GLUTAMATES, INOSINATES, AND THE UMAMI BOMBS". In that section he does discuss non-MSG ways of getting umami flavors. I think there's also been a video or two recently where he uses it in a recipe.

    For the knives, I see a couple different options, like hammered or not. Does one make a difference over the other in terms of use or are they both equally functional? I feel like it's a design thing but I could be wrong!

    What's the difference between hammered/non-hammered and ebony/ G10 for the knives?

      The hammered finish is mostly for aesthetics, but does aid slightly in food release. The ebony wood handle is beautiful, but G10 is completely impervious to water, so you may need to be a little extra careful with the ebony...but please don't put either (or any good knife) in the dishwasher. A link to care/instructions comes in the knife box.
