I used to be in the same boat, but with my old van. Didn't live in it, but needed it for work, and man did I spend a lot of money having people mess it up before I found a good, honest mechanic. He was a great mechanic, and a real standup guy, and his wife was amazing too; they ran the shop together. I stayed with them for years and recommended them to everyone. They treated me better than right and I'll never forget them.
You are right, quality craftsmen have retired, young workers are untrained and very unskilled. A housing community built last year near me had the foundation mixed with the wrong kind of sand, now every house foundation is crumbling already. I wonder if they poured a driveway for a neighbor a few months ago, it's crumbling already, again, cement was mixed wrong by 'professionals'. who were all 20 somethings.
I have bought & sold three homes so far and finding a handyman is like a project in itself. I have a large dog and I make sure that he’s close by when they come over
I'm sure you have already thought about this, but make sure whatever kind of locks/security you add can be bypassed in case you need to make an emergency exit due to a fire or something. I thought meeting someone in a Lowe's parking lot was perfect -- just enough people around to feel safe. After watching your videos I am always inspired, and usually hungry. :)

Just an fyi....I was doing Keto for years, high fat etc, but last year I started having chest pains, I was 56. I was eventually sent to a Cardiologist by the VA and come to find out I was on the cusp of a heart attack as my LAD heart artery was 99% blocked! That artery is commonly referred to as the widow maker. ALL my doctors said STOP the coconut oil, butter, ghee, bacon etc., any kinds of fats that can solidify will also solidify in the body & cause blocked arteries, amongst other things. Anyway, please try using Avocado oil & spray, and/or EVOO, instead of coconut oil, as these do not block the arteries. Coconut oil is great for using as a moisturizer for skin, though. All your recipes do look delicious! Good job on upping your security, we women can't be too careful!

If you don't hv it already you should get cameras on the inside and outside front n back and motion lights and sensors. May be you can also look into getting a dog for added protection and company.

Nice meal. If you are using a non stick pan, I would recommend that you be careful not to scratch it. Use a spatula that would not scratch it (not metal spoon). It’s bad for your health and toxic if it gets scratched. Stay safe!

I happened to subscribe to your channel the other and watched a few of your videos, your voice is so soothing. I got my dinner just now and sat down to watch and eat and I made almost the exact same thing you did except I made yellow rice with black beans and garlic with all the same veggies adding scallion, soy sauce, sesame oil and gojujang. It was so good. I had tno chuckle though. Thanks for your adventures. Hope you got your van back.

I always thought a great security measure would be a switch mounted near the sleeping area that would activate a loud car alarm siren. If someone was messing around outside you could set off the alarm before they actually made it through. Hopefully the alarm going off would be enough to get them running away.

Security is very important. Especially with no dog which could be early warning alert. We put little cameras up.
