I love the soups at Pho Viet Nam. They have two new locations near Ben Thanh Market. It reminds of a restaurant in Hoi An that also makes its own noodles. Except the Hoi An restaurant only uses special water from their family’s own well to prepare the noodles. I will definitely try the bò kho place that you showed this coming weekend! It’s one of my favorite Vietnamese dishes… 😊

Good watch! Turns out I went to Pho Vietnam by chance awhile back! Didn't even know it was in the Michelin guide - just popped in on the way to somewhere else - it was v good though from memory

you can do both, for me if the broth is not rich and salty, i tend to put sauces in it and some fish sauce too otherwise just some sate

The aromatic flavor seems to have disappeared in Canada. There must be short cuts taken now. Good to see you enjoying the real deal.

So in Canada, most places don’t have dipping plates so I use a second soup spoon to put the hoisin sauce and siracha sauce.

How did the broth taste without hoisin and chili sauce? 11 out of 10 :) Another key ingredient to a good bowl of Pho is the heat. The heated stone bowl keeps the broth hot for a long time. When the server brought it out, you can see that the broth was boiling so that is a good sign. But you have to wait a little and try a small sip of broth before you commit to a mouth full so you don't burn yourself :) - "Everyone in America put the sauce into the bowl" - They don't know any better :)

Why are you even listening to someone callling themselves “simonlebon”….eat pho any way you want to. The hoisin and chili sauce on the side is mainly for dripping your meat. You can definitely put hoisin and chili directly into the broth

I’m glad someone pointed out that Pho is supposed to be eaten as served. You can add a little fish sauce, but that’s pretty much it. You can use the dipping sauce initially and then halfway through add the two tuon paste to change the flavor up a little bit. What’s really bad is I’ve seen people add soy sauce to a fresh beautiful bowl of Pho. Pure ignorance. There’s always an exception and that’s when the soup is terrible to start where you have to modify it to be edible.

Pho Vietnam : I found the meat can cook too much. That broth is sizzling hot. So I want to try putting it in a little at a time. But it is good phở. Beef only.
The second place I will try and certainly go to for lunch today.

I had lunch at Bo Kho Gánh, a most flavoursome stew indeed. The bread just makes the broth become a second meal all of its own. I should have had two rolls I think. Wooden stools are really posh for HCMC!
