I think the reason they're rare is because Griffin said that Taako is "a very slight man." During the mid summer solstice. In a show where they don't describe people too much so artists have free reign, details like that become very solid.

We still have the graphic novels! And in an interview about the graphic novels (specifically the upcoming Crystal Kingdom one) they specifically said they wanted to utilize Kravitz more because he became such an important character and fan-favorite, so I definitely have hope that we'll be seeing more Taakitz content in the GNs :)
