Poultry broth from freezer scraps to the jar

- I cleaned out my freezer & used all my saved chicken & turkey bones, pieces and "kitchen trash", onion, garlic & carrot peels, celery tops & bottoms, any other vegetables starting to go bad.
Filled my large stew pot with all these goodies & covered with water. Added rosemary, sage, peppercorns & bay leaves. Let it all simmer for 24 hours
Strained the bones & veggies, it made this beautiful rich delicious broth.

yes...I do the same...lol...kitchen trash...nothing wasted ...I don't compost my leftover, my neighbor has a potbelly piggie rescue next door...so I dump the veggies, bones, etc over the fence as piggies are omnivores. I don't dump bones over until I have used them enough times the bones are getting crumbly...I use chicken bones eh, 2 -3 times, beef or bison bones 5-6 times. I even reuse the veggies...I don't chop them, but do add more each go round...I have a bucket of broth starter for chicken and bison/beef that holds solids that I strain off in the first straining.

I'm new to canning and had a bunch of chicken bones and thought why not try broth. I had vegetables from another recipe and winged it ... it smelled so SO good in my house all day! I got 6 quarts, canned it all up and a few hours later I realized I never tasted it LOL hopefully it tastes half as good as it smelled!! I felt so stupid lol

Barb I don't know whether I ever told you about this before, so I hope I'm not repeating myself. But every time I watch your canning videos it reminds me of my older sister. She had two bushels of apples, so she was going to make applesauce. Her & I got them ready & she put the first batch in the pressure cooker to cook, not can. When they were done she turn the fire off & before I could stop her she took the lid off. The lid hit the 10 foot ceiling leaving a whole & applesauce was every where. Thank the lord no one was hurt, I laugh about it now, but didn't back then. To this day she hasn't used a pressure cooker, she won't even stay in the kitchen if someone else is using one.

My mother had a fear of pressure canners. Before she was married, she worked as a receptionist at a hospital. They brought a lady in whose pc had blown up, in her face. She developed a true respect for them after that
Necessary to strain it? Just asking because sometimes whole broth seems to have even more taste.

😂. Yes I was, I think I had a houseful of company & quickly tossed it all in a bag & into the freezer. I probably thought “I won’t forget” 😂. Of course that didn’t work, I can’t remember what I did an hour ago 😂
