Resort did use table tennis instead of standard tennis. You described one of the games like F-Zero, but it's quite different. I've only played the SNES version, but there's no on-track obstacles etc. With the racing minigame, MKWii controls slightly differently.
29:01 For Mario Kart Wii you can use the wii remote sideways by itself or in the wii wheel (which pretty much the same thing), the wii remote and nunchuk, the wii classic controller, or the gamecube controller
