    We didn't have a deep freeze so Mom dryed hers put them in a sack leaving them on a string put red pepper in them to keep bugs out. We called them shuck beans. So good.

    Justro I have strung so many beans when I was at home it probably would be miles long. Daddy would buy heavy quilting thread and large needles to usefor stringing. All five girls would help Mom string themup while daddy kept stringing beans daddy would hang them on porch to dry and then stored them in brown paper bags for winter

    I remember mama stringing beans shw used match sticks as a stopper when I was a smart alec teenager I went to this girls home and her mother was snapping beans and pulling the strings from them and she called it stringing beans me being the smart one I showed her how to string them properly and they had a good laugh at me saying why in the world would anyone go to that much trouble come to find out they came from the city , you can guess what they nick named me !

    i read somewhere about a lady who had an old car in her yard. i think it was her husbands and he passed away and she couldn't get rid of it.
    she always dries apples and got to thinking about that car just sitting there not being used because she couldn't drive. she always layed her apples out on screens to dry. she took them and put inside that car and the heat and sun dries them in no time. she said only thing was the car always smelled like apples to this day.

      I use our car lots of times, to dry herbs, it gets really hot in there! Very wet and rainy lots of times at the end of summer where we live, in the Scottish Borders, Scotland.

    Well, I never thought I’d get to see from the perspective of a bean being strung upside down.😂 I love it. Love the decor too. I knew about leather britches when I was a teen because my parents always loved the old ways, antique stores, etc including things they had never done. My mom and I picked up a little mountain ways cookbook back then and we were intrigued with how they dried beans and I still have it. Thanks for all these details. The devil is in the details so will help keep me from making too many mistakes. (Amen, amen, amen to what you said about keeping your health and away from certain places if you can help it. I fully understand what you’re talking about.)💚👏

      I agree 100%, though I’d like to have one of those freeze dryers, it is cost prohibitive and I refuse to add debt by using credit cards. Since I live in a tiny house it would be nice to have space-saving, freeze dried food in storage. I’m trying to prepare as much as I can, but if the grid goes down, I’ll be on my knees praying. Thanks for this lesson.

    I have strung beans like that when I was a child
    Now I string the beans and put them on a clean sheet or put in box lids
    I take them out in the morning and bring them in after sun goes down
    Takes about a week then I bring them in and put them in glass jars and vacuum seal them
    This way you don’t have a black spot on the beans where thread is
    I also dehydrate in my Excalibur and they dry in 12 hours
    Much respect my friend

    I did some cayenne peppers like this a few years ago for my papaw but I used fishing line. After he passed on in July we were going through stuff at his house and I noticed that a few peppers were still on the string hanging on the mantle. I took one to see if the seeds in it will come up next year. My granny would always put a jalapeño or cayenne in her boiled cabbage and chili and then complain about it being to hot. We would ask her if it’s to hot way do you do it. She always said because he likes it. They were together 63 years and actually had an article in the Kingsport times news for being married so long.

    I remember visiting my grandmother that lived in West Virginia, and she had a back porch where the well was. It was also a place where she smoked meat, sulfured apples, and hung leather britches. I actually tried to make leather britches many years ago but it was a fail. I don’t think I had a warm enough climate to completely dry them. I talked to my aunt that is 92 years old and she said grandma used to have sheets stretched out across the tin roofs and they dried the beans on the sheets until they were good and dry.

    I dried a bunch of leather britches this year. They’re stored in a big gallon mason jar with a lid to keep any moisture out. Yes they are different but I have plenty in jars I pressure canned also. I actually watched TH-cam videos to pass the time when I strung mine. You should catch the last video from Miss Lori and Mr Danny at Whipperwill Holler channel. They went to visit an old mill in Arkansas. You’d probably enjoy seeing it.

    OK, this was totally new to me. I have learned so much from your site. My parents were born and raised Okies during the depression... learned so much from them. For sometime I have thought there must have been a relative or close neighbor or even an in-law from the Appalachian area as too much is what I grew up with and likes in taste that you have shown, but my ancestry research shows different🤔. Are you planning on doing a follow up (recipe wise) with your leather beans? Green beans can be like Okra...out of control in NO time😀. Blessings to you and and the girls.

    I feel so left out cuz I ain’t never heard of this before, thanks again Justro fer teaching me anuther trick to store my bean harvest next year and for ever more, I can’t wait to try beans that have been dried before cooking! I’m imagining hanging them above my wood stove heater, maybe that’s where you got your Smokey flavor .

    I really enjoyed this video Justro. I like learning ways of preserving our veg and fruits because were trying to grow more and more for ourselves. You know just what it took to grow with no chemicals! I totally agree with you about keeping healthy and staying away from doctors if you can help it. If you've got a pain, the first thing they want to do is sign you up for an operation. I like learning about nutrition because doctors are not trained in this.
    I hope you share more about how you grow your veg and share how you cook these leather britchy beans, I'm in the dark!

    I read about leather britches many years ago and finally decided this year to do it. When my beans first started coming in and there wasn’t yet enough to can I grabbed a needle and some quilting thread and strung them up. I look forward to cooking them this winter. And I have ordered some heirloom bean varieties to grow next year so my next leather britches will have big fat, meaty beans inside them like yours! Yours are beautiful hanging in front of the window.

    I haven't made leather britches in many years! I still have a few beans in the garden and may do a few! Momma always used quilting thread to string them because it was nice and strong. Happy stringing!

    Beans didn’t do well this year (my first year) They were planted in 3 sisters both with Hickory King and zucchini, the others with Sweet corn and acorn squash. Also planted some on the Hügelkultur mound with cantaloupes and cucumbers.
    I’ve never seen or heard of drying beans this way. When I get some beans next year, I’ll have to give this a try. Thanks and blessings Justro.

    That sure is Pretty. I have two pans a large one for company a small one for just us. Seeing all them beans in your silver pan. I think I would string beans from my large pan and string beans from my small pan. So I could just take the string of beans that I need to cook.

    We strung ours on light weight twine when I was a child. When I fixed them did not really have anywhere to hang them. I placed them on screen on my closed in porch.

    You brought back alot of memories for me of my Grannie, Thanks Justin. I have a recipe for dried corn that's just about as old as the hills if you'd like to have it. I haven't made these in years but they sure was good in the winter.🥰

      We would cut our sweet corn off the cob and for every gallon of corn you would add 1 cup of sugar and 1 cup of heavy cream in a large heavy metal pot. Cook this mixture on top of the stove until all of your liquid is absorbed into the corn. We would put the corn onto old fashioned corn dryers and cook on top of the stove until it was dry like macaroni. I doubt you could find one of those dryers now but I have put it on cookie trays and dried in the oven or the wood stove. This recipe has been in my family for about 150 to 200 years. To rehydrate the corn cook like you would macaroni and add your butter and salt and whatever you like. This is really good and we just loved it as kids.I'll send you my phone number in your email if you have any questions. It's always a pleasure to share these old timey recipes with people on I hope they give it a try.

    I enjoyed watching. I knew what leather britches was but I have never tried them. I watched a video on TH-cam one day where a lady was cooking hers and they looked delicious and I was amazed how the color came back as she cooked them. My green beans didn’t do well this year, hopefully next year I will be making me some leather britches. Good demonstration Justro, I like doing things like that it’s therapeutic to my mind.

    I have made them with my mom and for myself. A good survival skill for sure but I don't care for the taste of them. At my parents house we also dried pumpkin. We would cut the pumpkin in spirals then peel the edges. The strips were less than an inch wide. The loops of pumpkin were put over broomsticks and peeled poles they were hung around the edges of the porch on sunny days. On a rainy day the poles were put on the backs of two ladder back chairs, the chairs were about five feet apart with the backs facing each other. A tier of poles on the top and another level with the seats. Dried pumpkin was combined with dried apples and made into pies or stack cakes. I dried both last year, but in the dehydrator, no fly worries.

    I tried that last year. I hung them in an enclosed shed and they molded. I'm going to try again this year and hang them in my cabin.
    I also add onions and potatoes to my beans and pork...ummm good!

    Really liked your video bud. My grandma used to hang b her beans on the porch in Wva almost heaven when i was a young. No telling how many weevils we ate not knowing but them beans were dang good.

    I have Never seen one soul fix leather britches
    or use crocks to pickle things in down here in Central Louisiana. I think it must have something to do with bugs or humidity. When I say bugs I mean mosquitoes 14:10 all types of flies and if beans were hanging or crocks were open there was a problem it is So hot down here and doors and windows were left open in Grandma’s day She did lots of canning with jars No freezer canning for her I watched how you did it cause it may come down to drying food and now I know how it’s done the Shellie’s looked so good you showed Grandma used to only have a few of those to mix with the green snapped beans They were so good 🫘

    I don't have a good environment to dry anything; there's a high level of moisture in the air in my area. I thought, though, that a folding wooden clothes drying rack would make a good bean hanger (or for anything else you wanted to hang to dry). The modern one's are smaller; I have an old one that's quite large. Anywho, I dried a bunch of whole green beans in my dehydrator. I wonder if they'll taste the same as slow dryed?

      I understand. Some places are just not good for drying. Sounds like that would work good! I have heard that they will not have the same flavor.

    You are right about having them on the holidays only time we had them was at Christmastime and my grandmother did them because at that time we lived in Ohio she lived in West Virginia and in Ohio they didn't grow white half runners they are the best in my book but now I'm in Kentucky

    Grew up on these beans but ain't seen my family string these beans ever in Kentucky and Tennessee. But, I love it! And gonna do it! I just wanna know how long do I keep them up to dry??? And do un's cook 'em as usual...water, streaked meat, etc? Love the old ways ❤️🥰

    Last year I made leather britches and I used a big coat button for my bottom holder. I so enjoyed shelling them when they were dried. I seed saved about a cup of dried beans shared them with my sisters. My beans looked like small Northern beans and I cooked them with a smoked hamhock.
    What brand of beans are those Justro.

      @marymcandrew7667 Another bean I discovered is the Royal Purple bush bean this year. There are no strings when snapping them, tender when cooking, and once cooked, they are green! I did not seed save these, but I will be looking for them come spring.

    I have seen a German woodcut image of this method, which I suspect was brought to Appalachia by the pioneering Germans who emigrated from the Palatine region.
    However, I think they strung semi-dry Shelly beans, as a way to deal with not having preserving or storage containers, and hung them in the special attics ( which both my grandparents had) ...as you mentioned ... but I think they did not use the pods. The amount of time and fuel it takes to cook a dry pod tender does not jibe with the way they keep house.
    Sometimes techniques or methods get misunderstood from generation to generation.

    After they are completely dry is it required to put in freezer for preservation or is there any other way. I see in comments below they vacuum seal in glass jars after drying. so interesting, thank you.

    Hey Justro. Young kids at our family reunion one year made fun of my pot of baked beans and turned their noses up at the idea of trying some. All us older folks just laughed and said it was more for us. We’ve been growing Jacob Cattle Beans since we arrived from the old country. I guess the tradition is going to die out with this spoiled younger generation. So sad😔🤔🥴

      I'm from NY but now live in Scotland and I was able to try growing Jacob's Cattle beans last year! I bought them from a seed company here that carries heritage seeds. My garden soil isn't great yet as it's new, but I don't think they grew as vigorous as I'd have liked. Maybe I did something wrong?

      @@metcalfmills5679 I just finished the stringin.😁 That is so cool. I never knew this. I know you're gonna think I'm crazy but, we don't eat a lot of green beans. Me nor the hubby likes them. Neither did our kids. I grow some for a friend of mine. I will eat some fresh ...steamed, with some bacon grease drizzled on'em, salt, pepper and garlic. Now I can eat them like that fresh picked. But, I am not one of those green bean casserole fans at Thanksgiving. LOL 😁I loved the way they hung up there. It did look like a decoration of sorts.

    My grandmother before she passed away told me when they were little girls their mother and father would take the meat and slice it thin and take salt and put it all over the roof of the house that can be reached with a ladder they lay the meat on top of that salt in the summertime and then they'd cover that meat with salt and as the flies would land on it they pick the flies off the salt everyday and they cure their meat out like that because they didn't have a smokehouse and that's how they cured salt cure their meat. And I think back in them days she told me that it was tin roof houses and she says everybody back in them days that didn't have a smoke house that's how they cured their meat or salt cured their meat
