I know that many Mongols eat meat due to cultural reasons. How Buddhist Mongols deal with this thing?
Eating meat is not ban in Buddhism. Not only Mongolia also most Buddhists in other Buddhist countries eat meat.
Some branches don't eat meat, but most Buddhists do eat meat.
@CarryTheTruth So called hindus got it from the Shramanic tradition which buddhism falls under and Ashoka never totally banned meat eating altogether but made restrictions. Please read more about it before commenting.

Rinpoche is clearly a foreigner in how he structures his speech. Talks of Mongolian Buddhism from the perspective of an American and not a Russian Kalmyk. Not his fault since he grew up in United States, so his allegiance is with the Western world and not Kalmykia/Russia.
