    I just tweeted Alton Brown. I'm not sure if he'll respond. I asked him because in the mid to late 90s, all I looked forward to was Good Eats and Two Fat Ladies. What I just tweeted him was asking why Clarissa says to not call the raspberry sauce she is making a coulis, when EVERYWHERE now in cooking, so always hear everyone being fancy calling a fruit puree (sauce) a coulis. Makes me wonder why she was so adamant about it.

    • @KJ-xx6xr
      @KJ-xx6xr 5 ปีที่แล้ว +6

      Because its been commandeered to mean fruit or vegetable puree juices. Its properly applied only to the juices you get from cooked meats.Then its used for soups or sauce bases, or with pureed cooked meats. Very loosely applied to a pureed shellfish soup. Basically cooking "philistines" call fruit or vegetable puree's a Coulis. Its change in meaning, just like Gay didn't used to mean a sexual orientation but meant happiness/joy/carefree...Coulis now means fruit and veggie puree juice, someday no one will remember what it really is.

      It can be really surprising sometimes when eating dishes made with anchovies and liver to find that their individual tastes are no longer detectable, but the flavors of the dish are just so amazingly good you can't believe they're in there! I made a dish like that once out of curiosity after seeing the recipe in a magazine, the next time I made it I brought it to a potluck and one guest HATED anchovies with a passion but after others told her it was really good and they couldn't taste them she tried a little bit, and then a little more, and so on, expecting to hate it at any moment, but she ended up in disbelief how much she liked it, and she said she never could taste the dreaded anchovies. It was a Swedish potato dish called "Jansson's Temptation", and it was requested of me to bring it on several other occasions. I've had other things like that with anchovies as well as dishes where the liver disappeared, but I think it was all minced up with lots of other good stuff and it probably would have to be chicken livers. Maybe these recipes were that way too. Most everything these ladies made looked SO yummy.😋

    I have made the bubble and squeak and it's very good. Love these ladies and while my hearing is going I have no trouble understanding excellent diction which both these ladies had in spades.

      @TheSapphireDragon1 they’re delicious. The best part is the base where the flower meets the stem, it is the greenest, most potent spring-tasting thing I’ve found so far. I usually stuff them with cheese, a mix of half chèvre and half herbed Boursin. Dip in a very thin batter of flour/sparkling water or whipped egg whites as she says.

    One can see that each had respect for the other professionally as they would watch intently, when they had opportunity, the other prepare their specialties for the dinner. 🐟🦐🐔
