Even though that transformer says 3A that's 3 amps at 24v. Which is 72 watts. You are putting a 50v x 3A load on it which is 150 watts. That's why it would smoke.
He has a wife & daughter, full time job, weekly podcast, is in a band, operating arcade games at 2 locations, and was running a youtube channel doing weekly hour-long videos. After months of games going down & MK2 monitor issues, he got burnt out. Once he stopped & got his Saturdays & Sundays back, he doesn't want to go back. So we're down to the "once in a blue moon" videos he does with Jay. John mostly focuses on the Video Game Outsiders podcast now.

Seriously dude, he made great arcade videos pretty frequently then all of sudden he stopped completely
