    Chef tip: use small ice-cream scoop for curry gelatin for perfect spheres inside lion's head meatballs. I almost forgot freeze the curry ball 1 hour before placing it inside meatball.

      @@CHEFPKR oooh man that sucks. A couple years ago I worked in a kitchen (dishwashing mostly) and I picked up a pan that turned out to be fresh from the oven. I think it was a third of the way into that shift.
      On a more positive note I've been wondering if you've ever tried something called lefse? It's a Norwegian flatbread made from mashed potatoes!

      @@CHEFPKR I KNOW RIGHT! My family makes it sometimes for Thanksgiving or Christmas and it's my favorite part(of the meal). Have you ever gotten the chance to make it? I know it takes some special equipment so it's a bit rare.
      Speaking of Scandinavian dishes with special equipment, have you tried ebleskiver, the hollow Danish pancake ball?

      For the moon to come out you neee to freeze the meatball alittle as well to allow the outside of the meatball to become seared to keep the curry in, one concept of this is the idea of fried icecream

      in my home i cook mapo tofu and i make the curry but i use "colapez" i don´t know if is has a traslation is the jelly from the fish, and i almost freeze the curry so in the moment of open de meatball
      is still inside and you can see how begins to melt (
      sorry if I don't explain clearly i can talk in english just simple thinks).

    Had the opportunity to order regular mapo tofu from a local Chinese restaurant today. With the way Kuga's recipe was shown in the anime, I was worried it would be too hot, but I was pleasantly surprised! It's a really addictive kind of spicy and I would definitely order it again.

    another idea I thought of was perhaps freezing the curry into orbs then wrapping in meat and deep-frying. (probably making them smaller wouldn't hurt either.) I know thats how they do fried butter at carnivals and it seems to work pretty well.
    granted that's going out of the idea of doing it from the show's recipe, but might be far easier than playing with gelatin.

    I have been a fan of Food Wars! since it first aired and always wandered if these recipes really held up. Have a fellow foodie friend who does love cooking and she says it can work but she never tried. Seeing you do this is awesome to see with tips that the show doesn't completely give. As for myself I couldn't eat majority of the foods this Anime presents but I just cant help but love the creativity behind the recipes. Keep up the awesome Channel +sub

    Here is a tip on mapo tofu to kick the flavor up to 11. Use both red and green sichuan peppercorns instead of just red. You should be able to find it on amazon. When I make my sichuan spices, I use 1 tsp cumin, 1 tsp coriander, 1 tsp red sichuan peppercorn, 1 tsp green sichuan peppercorn, 1 clove and 2 dried red chilis. I toast the spices and grind them. When I cook, I only add about 3/4 during cooking and at the end I add the last 1/4 of the spices. I also add fresh thai chili or jalapeno if I have it. A key part of Mission Chinese mapo is aged Tobanjian, which you can also find on amazon. Search for pixian tobanjian.

    when the egg and the minced meat is from the same day you can try it you can eat it raw in germany we eat minced meat raw with onion and salt and pepper on a bun (german sushi :D) its frickin delicous :D

    You don't _need_ muffin trays for the curry sauce; ice cube trays would do. Put a couple of frozen curry cubes together.... But keeping the meat shell around the curry from flexing and leaking looks like the problem.
    Maybe baking, broiling, or _torching_ the meatballs could cook them without too much handling?

      I actually picked up an ice cube tray before I saw the silicone ones, but I want to be fancy...
      And yes, I think the problem is that I didn't let them set long enough or have enough gelatin in them to compensate for the fat in the curry.
      Torching, I almost tried but there is a significant amount of meat. It's going to be a fine line of cooking the beef really well before the curry starts to leak. And I think I have a plan...

    You coconut curry broth looks so interesting, unfortunately i don't have thai curry paste with me so I substitute it with coconut milk + golden curry roux + a bit of paprica and cayenne pepper, mix with the tofu they taste great :D

      I think it would have been great. If I made the meatball a bit more thick and froze it longer.
      But it was so good. I'm still eating the leftovers.

      @@CHEFPKR Awesome! Is the curry spicy enough? I have a high tolerance for spiciness and tend to always go for maximum on it as long as it's not obscene like ghost pepper/california reaper-tier. Curry normally isn't my thing but I bet if spicy enough I'd probably love it.

    I did the Gotcha Pork roast from the first ep a few months ago, I’m pretty pleased with it overall, tasted great, sauce was killer, but I had issue with the bacon being crispy on the outside and like soggy underneath, and advice you can give that could get that bacon a bit more crispy througout?

      Use a wire rack! It will help with airflow

      CHEFPK thanks for the response, I did use a wire rack, although I admit my cooking temp may not have been high enough. I think I had it at 400, cooked for about 35-40min

      @@DesertPunkStudios hmmm if it's still uneven you can always sear the underdone part next time. 400 should be plenty hot. When I made it I did it at 350, but in a convection oven

    if you want the lion head meatball to be more firmed you will need to deep-fried it. I guess that should help the moon not to leak

    So, I've been rewatching the series in English, and I've been watching your reactions again. The thought occurred to me, the moon didn't rise in this because the meatball couldn't contain the curry in the meatball, but, could you be like fall selection and use caul fat to seal the meatball and thus seal the curry in the meat better?

    I made the same dish but with really different ingredients: pork instead of beef (for some reason Chinese people actually don't eat a lot of beef compared to pork), a bottle of spicy beancurd sauce for mapo tofu which resulted in a somewhat watery soup, whole peppercorn in mapo tofu instead of pork (and I marinated that overnight with potato starch, rice wine and salt), and no gelatin in the curry (which was a mistake). I stewed the meatball in soy sauce while cooking the mapo tofu, and it came out really heavy but delicious, apart from the uh...failed curry filling. Yours is a unconventional take on classic mapo tofu but as a Chinese person, I approve! It looks lighter than what I managed and it probably has a more intense flavour too.

    Have you tried Vermont or S&B brand curry roux? They are personally two of my favorites, but Golden makes pretty good stuff too.

    ChefPK you are amazing, as soon as i saw the recipe made me hungry, excuse me Chef I have a question, before you chop the garlic you cut the ends and put them in the boat and waved it to remove the skin?.

    If you can get Tobadjan it really helps with the color and authenticity as it is a key ingredient

    I would have considered mixing egg yolk into the curry before freezing in order to help it maintain shape. After that, freeze and sear the meatballs before reducing the heat and cooking on low, ensuring that the curry was fully reheated.

    Maybe, you can give the meatball a little bit eggwash and some flour to seal the curry. Panko should do. What do you think ?

    Nice video...but I have a question..I want to make this dish, but my fiancee hate spicy things...Can you use something else instead of the hot pepper or I can do the dish just removing it?

      Yep! It won't be too similar, but try it without the spice. It will still be delicious. Then make your own spice bomb for your bowl
