My latest attempt has been half a mix of buckwheat and half quinoa flour (that's why I enjoyed your video so much!). Gluten free sour dough baking by Mary Thompson is amazing! She has an amazing mixed berry galettes recipe with the quinoa flour❤
Hi Tracy I admire your excitement to master sourdough, now Quinoa flour gluten free in making a starter. Being you want togo gluten free, it’s a healthy way to go and probably help your health. To mei think it’s an excellent way to make a gluten free starter. My grandson is 19, has Crohns, and what a terrible thing to see him battle this sickness. Everything is gluten free, but his infusions once’s month are causing him to reject his food not barely eating. It’s sad. I hope you feel ok my friend. I know it’s hard on you and everyone, but do all you can to do better for yourself. I know you already do.😊❤😅
Cool experiment! I am not a sourdough fan but it’s interesting to watch. My husband eats gluten free and the book I like best for baking is Gluten-Free on a Shoestring by Nicole Hunn. I usually use Bob’s Red Mill 1 to 1 gluten free flour. I don’t know if that’s available in Canada though.

Also, eating gluten free I eat a lot of chia seed, amaranth, buckwheat. I think rice flour is the cheapest gluten free flour that is not corn.

Yep I make quinoa starter. The microbes luvs it and bubbles fast, they have expensive taste. The starter smells yougurty.
