As someone who has worked at subway, yeah you can toast veggies. The trick is to get toastable veggies on first after you get your meat/cheese on, like pickles, olives, onions, or bellpepper. The high heat will keep the bread from getting moist from the veggies too, then you add your lettuce, spinach etc. Also, they have oregano/parmesan behind the counter, and a lot of people don't use it, so not everyone knows this.
