Why not get a mixer with a tilting head and removable bowl I hear you ask?
Well. Everywhere there’s a hinge, a pivot, a connection is a place to introduce flex and failure. A fixed head machine is much more solid. Usually more accurately made. Therefore they perform better. Creating better quality dough with less heat added to the mix.
For the 90 seconds it takes to empty and clean a fixed head and bowl machine, I’ll personally suffer those 90 seconds and take the better built machine.
