Squid Game, a Korean drama series on Netflix make this really popular as one of the live-or-death games. If you remember dalgona coffee before, well yes this is how you make the dalgona (honeycomb sugar) candy.

Making this is not as easy as it seems, the sugar syrup burned and when I added baking soda and then when it cooled down, it turned out kinda black and bitter
Yeah it's tricky. We've tried couple of times until finally got it right. You really need low heat :)

Use lower heat. And when you put baking soda, put away you pan from heat. Stir it until it become fluffy then put it on a heat again for 1-3 second then pour it. Actually it's better to use sugar to prevent dalgona from sticking rather than using oil.
Its easy for sugar to get burnt like that, once i tried to make caramel syrup the whole thing turned black and i got so scared lol
yeah this stuff is really finicky to make, it took me a failed attempt to understand how to make it, my mistake was that i didn’t put the baking soda in the sugar right away so the sugar burned too much
THE RECIPE:
(For those like me who are too slow to keep up with this vid, but still wanna try ;)
Spread oil on baking paper and the base of a flat bottom cup.
Place 1 and a 1/2 TABLEspoons of sugar in a small pan
Place over LOW heat and be patient. One sugar starts to melt, add a pinch of baking soda .
Continue stirring off the heat until honeycomb is a caramel colour.
Let sit for 5 SECONDS then pour on baking paper, squish with cup and imprint
And lastly… *try not to break it.*

You don’t need baking paper if you don’t have it, just find a non-stick surface and sprinkle some baking soda on it. For example, I used the bottom of a cake tin.
Also, I don’t have any cookie cutters so I broke it up and sprinkled it over some ice cream with some ice magic. Tasted really good!

I'm Korean! It's nice to see these stuff is getting popular.. One extra fact you might not know about Dagona is.. This act is usually illegal in many areas. So if street cops stop them from making Dalgona to kids for money, they have to "technically" wrap up their Dalgona stand... Will they wrap up? No! Absolutely not 😂 they pretend to wrap it up and when the cops walks away, will just go to another side of the street to do so. Well, I've done this when 2010-2011, so I don't know if the securities are more secure now, but it was my childhood memories in Korea.

Real Dalgona Recipe: Melt two spoons of sugar in a ladle. Melt carefully so that the sugar grains do not burn until you can't see them all, add about a pinch of soda, and stir quickly. At this time, you have to be more careful because it burns faster.

The key is super low heat and letting the sugar melt slowly while constantly stirring. It should stay a very light gold color. This can burn very easy and you can usually tell when it’s burned by the color being too dark. This can be very tasty when done right :)

It's so disappointing how many people have been making it. I mean this is decent imo but i've watched others make this candy and it's so brittle and teeth-shattering. I know because i followed those recipes and it tasted bad. This recipe is decent imo. Dalgona needs to be a little aerated and have a lighter crisp otherwise you're essentially eating a rock hard toffee that barely tastes like honeycomb and nore like an under cooked caramel

Tips to make dalgona easier♥️:
1. Applied oil before starting everything, u won't have time for it later
2.keep mixing it with a spoon stick or anything else (it will start to fluff up because of the baking soda but don't stop mixing)
3. Try to mostly use non-stick pan other pans will also do but it has more of a chance of working on the first try
4. Don't give up!!

Fun fact: that is called “dalgona” also known as “ppopgi” is a popular candy in the streets of South Korea. Vendors add sugar to melt then they add baking soda it turns lighter and then they added a flat surface onto it and they add a mold into it, if you peserve the shape without cracking it, when dalgona is added a stick and it tasted like burnt-slightly. I hope this helps
