Unusually this would work in Scotland this week, weather is gorgeous and my mate is over on Islay as we speak visiting his family and picking up the samples of our now 10 year old whisky casks, which are Bruichladdich so from the same distillery as The Botanist.
Andrew, one thing I'm going to try on this potato salad would be to make it more elote-like by adding in some chili powder. Other than that, looks fantastic. Also crema would be great instead of sour cream, but I use them interchangeably....

It helps apply the oil evenly, cuts down on waste and can even be used to help clean the grill. Just remember to empty it and clean it thoroughly after use or the oil will gum up the pump mechanism.

Adding salt to the geound chuck as a binding agent is perfectly fine, and some may say make the best burgers possible, along with ensuring the fibres are vertical, not smashed.
Just finished up with a fabulous 4th of July feast using this menu. I cannot tell you how mush we enjoyed it. Could find no poblano in town so I used pasilla and Anaheim’s. Also had to accommodate a shell fish allergy so shrimp were in skewers and served to the side. All were happy 😊
Another option on Grill cleaning: Yes, do the preheat, but skip the wire brush for a stone or coiled steel scrubber, this avoids cheap brushes leaving wires on the grill. Also, have a bowl of water handy dip[ scrubber in water and then scrub grill. Instant steam clean.

I’m gonna throw this out there: the recipe that Babish made for the ceviche I’m sure is tasty but please keep in mind that the recipe comes in all shapes and sizes- this is by no means the most traditional (although I’m sure delicious). Just don’t want people to go into a restaurant and expect this to come out when they order a ceviche
