  • Bean Burger:
    Prep: 10 minutes | Cook: 25 minutes | Total: 35 minutes
    Yield: 4 servings | Serving Size: 1 burger
    Ingredients:
    1/2 cup quinoa, cooked
    2 (15 oz cans) dark red kidney beans, drained
    and rinsed
    1 small onion, diced
    1/2 cup red bell pepper, diced
    3 cloves garlic, minced
    1 Tablespoon lite soy sauce
    1 Tablespoon olive oil
    1 teaspoon cumin
    1/s teaspoon coriander
    1/2 teaspoon chili powder
    1/4 teaspoon cayenne pepper
    Directions:
    1. Preheat oven to 425.
    2. Heat one tablespoon of olive oil in pan. Add onions, garlic,
    and bell pepper until tender, 5-7 minutes.
    3. In a bowl, mash the beans then add quinoa, lite soy sauce,
    spices, and contents of the pan.
    4. Mix and form four patties.
    5. Place patties on parchment paper lined baking sheet and
    put in oven for 20 minutes.
    Recipe Notes
    : These patties can be grilled or pan-seared. To grill or pan sear, follow steps 1-4 and place patties on a parchment-lined baking sheet then place in the freezer for 30 minutes. After 30 minutes, remove from the freezer and cook patties
    on the grill or on a pan coated in cooking spray on medium heat, flipping halfway.
    • These patties can be served on a whole wheat hamburger bun, wrapped in a large lettuce leaf for a lettuce wrap,
    or skip a wrap altogether. This yummy protein-packed patty tastes great on its own.
