Methi Matar Malai
Ingredients:
1 tbsp oil
1 medium-sized onion, chopped
4 almonds
4 walnuts
1 tomato, chopped
1 tsp red chili powder
1 tsp turmeric powder
1 tsp garam masala
1 tsp coriander powder
Salt to taste
1 bunch fresh methi (fenugreek leaves)
1 cup peas (matar)
1 cup milk
1-2 tbsp butter
2 tbsp fresh cream (malai)
Method:
Prepare the paste:
In a pan, heat 1 tbsp oil. Add chopped onions and sauté until they turn golden brown. Add almonds and walnuts, and fry them for a few minutes. Then, add chopped tomato and cook until soft. Once the tomatoes are cooked, add red chili powder, turmeric powder, garam masala, coriander powder, and salt. Stir well, cook for another 5 minutes, then turn off the heat and let the mixture cool. Once cooled, blend everything into a smooth paste.
Prepare the methi (fenugreek leaves):
Wash and chop the fresh methi leaves. In the same pan, heat a little oil and sauté the methi leaves until they wilt. Once done, remove and set aside.
Cook the peas and paste:
In the same pan, add oil and heat. Add cumin seeds (jeera) and peas (matar), and stir. Add the prepared paste and cook for 5-6 minutes, stirring occasionally.
Finish the dish:
Add the sautéed methi leaves to the pan, mix well. Pour in the milk and let it simmer for a few minutes. Finally, add butter and cream (malai), stir, and cook for another 2 minutes until everything is well combined.
