Kim you grease the paper so that the cake doesn't stick to the paper, you grease the tin so the paper doesn't stick to the tin. If you do that you can just take the tin out of the oven, turn it upside down and the paper falls out, then you peal the paper off of the cake. If you don't do that you get what happened in the video, you have to scrape the cake off of the tin.
+ringosis the only reason to grease the tin when you put in paper is that the paper WILL stick to the tin beforehand, but that would only require a tiny bit of grease. Baking sheets don't stick to your tin when you bake. Maybe if you leave it long enough to turn to charcoal.

Kim, those spring-form pans are meant for cheesecake, so I'm not surprised that it leaked in the oven. They are not ideal for regular cakes. Pick up some cake pans and if you can find ones with a metal slider at the bottom, even better. That slider helps release the cake. Great video, buy Duncan can't cook cakes lol. Happy Birthday!

I made this same cake the other day, my colors were more pastel than rainbow but I got six layers out of it. Though next time I make it I would add less sugar because it came out very sweet

Kim, American cakes are made with milk. I have actually never heard of a cake that was not made with milk. I do have to defend Duncan, when you make an American cake it is best to follow "all" instructions. That includes greasing the pan, using greased paper, and greasing the greased paper. x.x I also think Duncan had the height of the layers right. Looking at the picture those layers was thin. If he had done more layers with the exact food colouring it could have been a bigger cake. He would not have had enough frosting though. Did he adjust the measurements for the smaller cake?

Oh, Kim. I am so sorry. Having gone to school for baking and pastry I could not help but cringe and also laugh for the entirety of the two cake vids you have shared with us. I think you need to invest in atleast a hand mixer, although that couldve been a disastrous mess, if not a more edible cake and frosting/icing. +Sandriell Actually there is.... that's why in classes they teach to use the correct ones. Just Becuase they have the same measurements does not mean that your measuring is the same. They are styled for each ingredient.
kim, since you mentioned the burned cake at the bottom of the oven it reminded me that my parents would always put a sheet of tin foil on the bottom under the heating coils so that cleaning would take like no time at all and you just have to replace the foil. You probably know that already but I thought I might say it anyway

Baking is like chemistry, anything close/good enough will fail horribly. I had a friend try to substute water for milk in a pancake mix, he got something that smelled and tasted like rubber.
I suggest the next time a Yog cooks they do it as a live stream. I can't cook to save my life, but even I could have typed, "Well put it back in for a couple more minutes" when you pulled out the uncooked part, and I'm sure there are other Yog fans out there who might have been able to help fix things a little along the way. Maybe not as funny a Yogcast, but better cake. :)

You don't need to grease the paper... It is grease proof paper. It's only purpose is to not be greased

It's because the base needs to be white for the colour to work. The mixture is a yellow white, so it changes the colour. :)

greasing the tin helps the paper stick to the tin, so the cake won't warp whilst baking
also, i hate to be pretentious, crack the egg into your hand and let the yolk rest on your fingers, and let the whites drizzle between your fingers
