Just a couple of things I do differently, but I think adds more flavor. I actually cook my roux a bit longer, making a sort of blonde roux. It only takes about 2 - 5 minutes, but the bacon comes out of the pot, using the bacon fat and some butter to make the roux. Then, I add my 'holy trinity', along with the potatoes, cooking them in the roux for a bit, before adding chicken stock. I set some of the 'trinity' aside to cook with some spices, adding the cream to them to warm up the cream before I add it to the soup. Now before adding this to the soup, you can see how thick or thin the soup is, taking the time to add more chicken stock, or allow the soup to thicken, adding a bit more flour or corn starch, before adding the cream. I like how hearty you make this soup. That's how it should be done. Thanks for sharing this Chef.

Just made your corn chowder and it was delicious. I hade some corn and potatoes left over from a crawfish boil and used that. Needless to say I didn’t add all the peppers because I thought it would made it too spicy. Thanks for the recipe.

Unfortunately, the production value on this effort is terrible. First, invest in a microphone, second - lose the stupid graphics and overlays, they add nothing, and third - turn down the background music, it’s very annoying. It’s a nice recipe and you have an engaging personality, but whoever edited this for you did you a disservice. Btw, never, ever let someone else grate your nutmeg, lol.
