I enjoyed the video. Did you happen to notice the "watercress" growing in the spring water? When I was there back in 1980 I found some and tasted it. It is supposed to be edible, but I found it was a bit "spicy-hot" for my taste buds to handle. A little bit would go a long way in a garden salad. But I do not like "cilantro" either for almost the same reason.
You're so right! Looking at this video after 3 years and, yes, there is a lot of "jitter". It was filmed while wearing a GoPro harness--live and learn.
