  • In this video I'll show you how to smoke St. Louis Style Pork Ribs using a Traeger Grills Pro 780 pellet grill. I'll be showing you how to trim a full spare rib rack into the St. Louis style cut, seasoning and some tips and tricks to nailing that perfect colour and bite on your ribs! Now let's get to cooking!

    Nice recipe. My ribs have all the smoke and all the flavor I was looking for, but unfortunately they're extremely chewy. I will try to fix this with a 50/50 apple cider vinegar/water solution and the ribs on a baking sheet covered in foil in the oven at 275 F degrees for another hour to an hour and a half. Wish me luck!

      If they’re chewy they’re still underdone. If you have an instant read thermometer, aim for 208-212° in the thickest part of the meat, that’s when it should be nice and tender. Wrapping will help tenderize as well. Good luck!

    Nice looking ribs bro! I noticed you removed the membrane from the back of the ribs. Once I let it be and to be honest nobody noticed 😅. Have you ever tried these ribs without removing it?

      Thank you! I’ve done them with membrane on and the biggest difference I found was that it was a harder/papery bite near the bottom. You’re right though, it’s not a huge difference.
