@@adonisevagorou7767normally operating water is coming from hydrpohore tank controlled by a solenoid valve. On some smaller ships there might be a operating water tank which is situated at a high level exerting required pressure at all times
Displacement water is supplied to displace (as the name suggest) the oil that is still inside the purifier. You don't want that much oil to go to sludge tank every time your purifier completes a de-sludging operation.
Sealing water is the one which is deployed after de-sludging in order to seal the bowl and maintain an interface. Replacement water is the one which is deployed before de-sludging so that all the oil inside the bowl is replaced by this water, before opening of the bowl. Purpose of replacement water is to minimise oil lost during opening of the bowl.

Size of gravity disc is used to maintain interface. Correct gravity disc ensure right position of interface. Now when de-sludging is to be done, since the purifier is in operation it still has lot of oil inside inner side of interface. If you directly provide bowl opening water all the oil that is inside will also be going inside sludge tank. To prevent this oil loss, replacement water is provided. Hope to have clear your doubt. Also please see de-sludging operation video to get visualisation of what is I just now explained.
It can vary from system to system. One can set the interval. Also when running under auto, cycle will vary depending upon quality of oil. If oil quality is bad then bowl will filled with sludge and water more quickly and cycle time will reduce.

Why is displacement/sealing water supplied to oily water separator?

Normal cycle for standard quality of oil is approximately 50 min to 1 hour
What is discharge back pressure, why it is to be maintained?
back pressure is needed to keep the interface thus avoiding overflow condtions.. usually its 1.5 to 2 bar depending on the oil used.
