During this time of lockdown I love watching these videos. It is like traveling with a friend. Half the things he eats I’m not sure I would, but I love watching him eat. His enthusiasm about the people and culture make it feel like a vacation, not just a food show. He must secretly be a cow with 2 stomachs with all he eats in a day, though. 🙂. After watching the Ethiopian videos I made a Ethiopian dinner in my house. I even made injera. It was so fun if imperfectly done.

After watching hundreds of Mark's reaction, I can kind of tell which one Mark truly enjoys the most among dishes. Sweet seems not his favorite taste. Rather he prefers something like fresh, silky tender, and deep flavor. In this video, shrimp dish takes the winner! I'd like to see Mark a lot more tinted like tower of Pisa with many upcoming dishes :)

It's really good to see Mark able to go out again in Thailand. My entire month-long trip (planned for this past April) had so many culinary stops based on Mark's videos in Phuket, Krabi, Bangkok and Chiang Mai... Obviously, the trip of a lifetime got canceled because of Covid. I hope to try again next year. I was looking most forward to Panya Seafood and Beer...

LOL, I know right?! I think maybe he has a high metabolism which I'm sure the spicy foods revs it up more. Also he sweats all the time because Thailand is humid. You lose that water weight for sure.
He doesn't eat a lot on his normal life, there is a video about what he dose in one day, he has really healthy food and exercise a lot. He eats a lot when he is only on his trip to make TH-cam videos. Also spicy is help to digess I guess

My Indonesian Oma made delicious dishes like this - but always prefaced that a bowl of rice is the staple of the meal, fresh sambal is mandatory, and all other proteins and sauces are the compliment. Hands are the utensils. I miss her so much.....and Mark - you would simply die for her coffee!!!!!
