Dear Delta and MOM executives, Red velvet cake historically came from a little bit of a different recipe. Now back in the day, the cocoa powder we were using was a little bit more dusty and musty... The cocoa powder would oxidize via a chemical reaction while it mingles with air. This oxidization caused the powder to turn from brown to red. Thus, the resultant cake would be a pleasant red color. In my opinion, I believe this type of thing may have been more impressive before we figured out shit like science and the internet. Red velvet and chocolate cake today are two distinct understandings (culinarily). The modern red velvet recipe typically uses red food coloring as you've mentioned. The GMO artists over at Monsanto have mastered no longer letting our powder oxidize. In addition, red velvet recipes typically call upon a cream cheese frosting, whereas the most common frosting for chocolate cake is either chocolate or vanilla buttercream icing. In my opinion, though the two cakes are now somewhat distinct, they are - in essence - the same thing. I picked up on the tidbit (potentially theoretical) that your favorite cake flavor is yellow cake with chocolate frosting. In place of vinegar, I use a splash of freshly brewed coffee, which has similar acidic properties - I find that it adds a smooth richness and goes wonderfully with the cocoa. I get where Delta is coming from though - most places do NOT make good red velvet cake and leave me underwhelmed. Not me, though

So, about the red velvet- I think the point was to add very small amount of coco powder in the cake batter with the acidic vinegar- which reacts and gives the cake a faint, dusty pink hue, but not red. The colour thing happened later. The technique of making red velvet is slightly different and should give you a more moist cake( I think it’s called reverse creaming). Having said that, all my knowledge on this is coming from watching Claire Saffits and not because of any culinary experience
