For golems to spawn area has to be considered a village (Also putting them in danger with a zombie increases the chances for spawn to 100%). The requirements for a village is 3 villagers with 1 bed each. That's why most iron farms use only 3 villagers. When you removed the beds, it essentially removed the village status, which does make sense since if you think of it from their perspective, it's just a prison. Before, it was a community, now it's a mandatory trading zone where their captor forces them to wake for all eternity and never eat or sleep... Yes, I am guilt tripping you... Doubt it'll work though since those prices is criminal enough to want them in an eternally sleepless prison.

I do believe villagers need the ability to sleep to create golems, every farm I've seen has them and the dude making them always stresses their importance. Love the vids bro
You could make your animal farms far more efficient. make a 1 wide 3 deep hole. Put a hopper at the bottom leading into a chest. lure 2 animals of same kind into the hole. Put a fence post on top and pour water into the bottom right above the hopper. The animals will jump but cant get out. You just feed them until they hit 20 and they will die and drop the meat and leather and such.

Meanwhile: chickens are the only animal that multiplies "automatically" with dispensers throwing eggs, raw chickens sell for emeralds to chefs villagers (or whatever they call the ones coming to smokers) and feathers sell for emeralds to fletcher villages. So chicken are infinite automatic growth, emeralds and food which is basically everything you need to get everything else.

An idea for the edge of the chunk, where you have the lava: no stone blocks but stone fences instead. Just as good at blocking lava, but you still have a light source.

It may be somewhat safer to use lava for the golems. They shouldn't aggro on you. Then they'll die of residual fire damage.
