Because she is a musician and can literally do what she pleases with a piece. When this piece was written and earlier was much more common improvising. That "purity" is something relatively modern.
And you as a listener can just stop the video and go to another interpretation that pleases you. Luckily on the internet you can find a lot that are really good and fair to the sheet. One musician wanting to give a bit more of his soul on a piece will not harm classical music as a whole.
I give You 1.000 years to practice. If you play two notes as good as her come back and comment
