When i was a teen I lived in South Jersey and there were plenty of good cheesesteak places there . A lot of italians lived there. I guess thats why the cheesesteaks were so good. Especially the Pizza Steak , which had provolone, mozz, sauce and oregano . The best !
Joey Vento, founder of Geno’s, claimed to have been the first person to put cheese on a steak sandwich and he says he originally used provolone. Not going to say it’s true/not gonna say it’s not but that was his claim.
Like Krazy Joe said it Corleone's in Phoenix and Scottsdale are fantastic! Love going there and the only decent cheese steak here in AZ. Rolls they use are stiff but very fresh.
The best cheesesteak in Mont. County used to be at Cisco's Bar in Flourtown. Unbelievably awesome. I can still taste them. You'd sit at the bar and drink and watch them making it. Using old pot lids to melt the provolone on the flat top. I'd get the carmalized onions and put on Tallarico's Hot Hoagie Pepper Spread. They also had Pennsylvania Dutch Birch Beer on tap!
Did you ever try Papa's Pizza in Robbinsville NJ? They have the mustard pie. It has spicy brown mustard on the crust before the tomato and cheese goes on. It's not dominating but adds to the taste. With meat toppings its even better.

Interesting enough, I ate have a friend , named Crazy Joe in Delco, he’s kind of a legend ..:..before you make the lifestyle change to cut out the meat, there’s a couple good spots out here in the burbs, Delco Steaks has been really good each time I had them, and then there’s Wolfs Superior Sandwiches in Aston who are just insane with their creations!
I don't recommend vegetarianism, but if you do it, watch for signs of completely-drained-weakness. I tried three times and could never do it. It sucked.

If you’re ever in Colorado, Taste of Philly is the best you’ll find. They even use Amoroso’s rolls.
