Another possible cause: your camera is programmed in 'Fast Record' mode and as soon as you turn it on, it starts recording. Third cause: the camera is programmed in 'Motion Detection' mode and as soon as movement is detected, it starts recording. These configurations are accessible directly from the camera settings.
