As you correctly said dum biryani is always better than steamed Biriani because the rice shall be baked perfectly dry but care has to be taken while the biryani is cooking heat has to be controlled and the steam escaping has to be checked and you have to be on the spot till Biriani is cooked not as in the case of steam cooking waiting for the whistle
