Beautiful chuck roast. That's how we smoke a brisket in Ft. Worth, TX. Can't afford a whole brisket any more. Our chuck roasts are fairly puny compared to your cut, but, will definitely smoke it like this next time. It's so much easier to do this cut time wise....those 16 hour briskets is like doing a marathon. I sure miss living in Australia...I used to live in Coomera and Surfer's Paradise QLD, as a young teenager with the family. Unbelievable the growth since then.
Maaate! I tried this last Sunday night as I happened to have one in the freezer and it was amazing. Soo tender, smoke ring, bark. So much like brisket but not as fatty/oily. Definitely be doing this again. Only about 7hrs for a big one too.
I find if I get my Bronco about 10-15 degrees hotter than what I want, by the time I put in the deflector and food, it drops down to my goal temp. I always put the air intake vent to 1 or 2 and it purrs from there. Same result, just a slightly different method. As always, love your vids
