Did you blanch your beets or cook them complete before you froze them. I never tried to store them that way. It is a lot easier since my farden beets do not get very big here.
No blanching. I just washed them good, skins on and no blanching. Then I boiled the Beets whole for about 3 hours. Then I let them cool without straining the water. Later when they were cool, I cut them up for eating and freezing. Most of the skin comes off during the boil. I cook them whole so they keep their colour and vitamins 🙂
