Married to a Mexican for 17 years now. They use cilantro alot. I love it. They also eat cactus, I love that to. Lol. When I go visit my mother in law in Mexico, I know I want be hungry because I love authentic Mexican food. I have learned to cook Mexican food through her, my husband, and in laws and friends around us.
I did not realize that you had a teaching background. That explains so much to me about you and the manner in which you present everything on your channel. You are an amazing woman and an awesome teacher as I am always learning when I watch your videos. Thank you for all you do for us.
I know the is a really old video but as a non American single person I love that all the produce is loose and not bagged up n ridiculous quantities that are just going to end up in the food waste bin, that is one thing that is so annoying about shopping/cooking for one.
Love ❤️ plant based options. I have 10 lbs each split peas, garbanzo, lentils, quinoa, lentil pasta for just in case. I just spend extra $10 per trip that goes into emergency rations.
Thanks so much for these WW theme videos. The recipes and savings look fantastic. I also really appreciate that you get right into the topic. No annoying 15 minute rambling preamble.
I have really enjoyed these low cost videos...I live on a budget ... the fun on limited income.thank you for doing all of these videos love them all looking forward to the next
I just love these videos!! We spend a fortune on groceries because we buy all organic but your tips really help to inspire so inexpensive delicious meals! Thank you!
Your black bean alfredo is my favorite thing now. I posted that thing to facebook yesterday and everyone wanted the recipe. Enjoy all your videos-thank you!
Thank you for sharing budget friendly recipes. I enjoy meal planning for my family and try to always include a meatless meal or two. Please continue to share all things budget related. We love cilantro, so much flavor.
I am starting to play around with more meatless meals. Not ready to go totally plant-based (we love dairy), but it’s good to know e can get along fine without meat for a few meals if we need to.
I love making Chuy’s creamy jalapeño dip!!!! I’m stealing this WW friendly version! If you can find them try them with Corn thins! They are delicious and you can have a lot of them for a small number of points! You have a new subscriber!!!
Love budget friendly meal prep, good job! 😀 I'm trying to eat vegan and I make a big pot of rice and beans every week in my instant pots --a must in any kitchen!! 😂
11:18 watching an old video. I thought “I think those containers suck” yep. Nice to know it wasn’t me. I still like the original ziplock lunchable containers.
I love cilantro! I just discovered your channel and I'm hooked! Loved the meatless video. I'm vegetarian and now I two new recipes to try! Please do more!🙂
I have been very intrigued by your cooking and shopping methods. I do love cilantro. I have issues with corn, so I must substitute both corn and the tortillas. Otherwise looks tasty. Also love the taste of jalapeno, not the heat. Fortunately, I know how to take out the heat. Thank you for all the tips.
I make a pasta very much like what you showed but it has no tomatoes, we have an allergy, we use a can of pumpkin instead. I call it spicy pumpkin pasta and everyone loves it.
I NEVER would have thought to make a Mexican seasoned Alfredo sauce, but that looks really tasty. I’m going to make it this next week for our casserole night (Wednesday) Thanks for the inspiration!❤️
LOVE your shirt, first off :) The floral is a great pattern on you. Also, I was just thinking of doing some meatless dishes for the fam, and now I have this! Thank you for sharing. Bummer about the containers because they were so colorful, though...
@@SeeMindyMom I love old navy! I use my Ibotta money to save up to buy me some fun things when they have clearance ☺️ I hope you're all adjusting well to being back home
Honestly, I just search on pinterest and then I adapt it according to my taste. I can tell you that the ranch seasoning requires powdered buttermilk, which you can find in the baking section with the other powdered milks.
Wow! The cheapest canned black beans here is $0.72 a can! Also, I’ve been making my beans in my Instant Pot. I loooovvvee cilantro! I have some meal prep containers and it seems like the lids only go on one way. If I have trouble getting them on, I turn the lid around. Have you tried that?
"Of course some of this dislike may come down to simple preference, but for those cilantro-haters for whom the plant tastes like soap, the issue is genetic. These people have a variation in a group of olfactory-receptor genes that allows them to strongly perceive the soapy-flavored aldehydes in cilantro leaves." Bet one of your parents or both feel the same way!
Quick question of the black bean alfredo recipe: you didn't say there was alfredo in it but it was in the pot. How much did you use? Was it the rest of the jar from the other recipe? Your inspiration recipe used 14 oz.
The tortilla looks uncooked? Is they safe to eat? All my life up till now I was thought you must cook them but some folks don’t.. I find that puzzling?
I Love cilantro. I would at least garnish almost every dish with it. Unfortubately, I am the obly one in my house who feels that way. My FIL would rather pull his eyelids off than eat cilantro.
Those were both great looking dishes Mindy! The taco one especially with the corn salsa and creamy sauce, it sounds really delicious. I'm going to make the creamy sauce next time I make tacos!
Thanks, Rosemary, I will try that! I think the issue with these though is they don’t fasten. There’s nothing for them to fasten to, so they lift easily. Nothing was “clicking” to tell me it was sealed. P
I know this is older video but i just wanted to point out Alfredo sauce isn't vegetarian as it has Parmesan cheese which is unfortunately not veggie just wanted to point that out to anybody who is wanting to make this but wants to keep it vegetarian :) really enjoying your channel! you've given me some great meal ideas!

These budget menus are really helpful, especially at this time. You don't need to eat meat every day!
Thank you, Marge! I’ll keep making them.
If only I could convince my husband that you don’t need meat every meal! Looks delicious! 😂😂
I have really enjoyed these low cost videos...I live on a budget ... the fun on limited income.thank you for doing all of these videos love them all looking forward to the next
More meatless ideas please! I love your videos.
I really enjoy the budget videos that are also WW friendly! Thank you!
Love cilantro! And your videos too
I’m totally hooked on your channel! You’re so approachable and I love your “no fuss” personality!
Thanks, Gabrielle! Would you tell my husband that part about the “no fuss personality” 😂 Glad you found me!

It’s definitely finding its way into a lot of meals here!
Strawberries with vanilla yogurt sounds like a good dessert to me.
Love cilantro!! Both meals look really good! I plan to try them both! Thanks!
Hope you enjoy

Awesome! Thank you!
Love cilantro and the corn salad/salsa looks amazing!
I like cilantro and I love your idea to put the corn tortillas in the air fryer to make chips. thanks.
I have been vegetarian for seven years now, so I loved this video!!!
Love cilantro! Can’t wait to make this
Great video! Would like to see a remake with rising grocery prices
So making all of these things! And yes I love making beans in the crockpot instead of canned.
I’ve been waiting forever for you to do a meatless meal video! More, please!!!
I always add one crushed garlic and about 1/2 tsp Oregano to my Pico!
I need to do that next time. We love garlic. I thought about the oregano but wasn’t sure how it would go with the fresh cilantro.
I make a pasta very much like what you showed but it has no tomatoes, we have an allergy, we use a can of pumpkin instead. I call it spicy pumpkin pasta and everyone loves it.
Those tacos look amazing!

Love love love cilantro!!!
My husband also loves it! I like it fine, but it’s not a deal breaker either way for me on a recipe. P
I'm going to try the Creamy Jalapeno dip for sure!
Just seeing this video and missing those prices from a year ago. 😢
❤️ cilantro
'Dadgum', oh the language, Mindy. Lol
I know! I was channeling my mom, whose other go-to is "doggonit"...LOL! I try to keep it PG rated here, but I'll admit I'm no angel all the time! :)
I love cilantro!
LOVE your shirt, first off :) The floral is a great pattern on you. Also, I was just thinking of doing some meatless dishes for the fam, and now I have this! Thank you for sharing. Bummer about the containers because they were so colorful, though...
Thanks, Darcy! I picked that up on clearance at Old Navy months ago. LOL! Found it recently and I've been wearing it a lot. :)
@@SeeMindyMom I love old navy! I use my Ibotta money to save up to buy me some fun things when they have clearance ☺️ I hope you're all adjusting well to being back home
Could you do some air fryer recipes 😁
I can eat cilantro at every meal 7 days a week. Yes I love cilantro
Can you please post your recipes for your homemade taco and ranch seasonings?
Honestly, I just search on pinterest and then I adapt it according to my taste. I can tell you that the ranch seasoning requires powdered buttermilk, which you can find in the baking section with the other powdered milks.
So creative !!
Thank you! 😊
Those tacos sound so good!!😋💗
They are SO GOOD. Hubby texted me from work yesterday to tell me everybody was impressed with his lunch! 😂
Love cilantro!
Going to make those tacos this weekend
L♥️VE cilantro and these meatless recipes. Bravo Mindy👏🏼👏🏼👏🏼👏🏼👏🏼
Yay! Thank you!
I would love to see more meatless ideas! Love your videos!
I have a video coming out Monday about this very thing!
This is exactly what I need right now
Cilantro is an acquired taste. Plain parsley can be substituted for those who dislike cilantro.
Luv your videos.
I was just thinking about what to sub for the cilantro. It tastes like soap to me. Love everything else Mexican though!
Hey yall I just wanted to say that I get protein pasta instead of meat alot since it is shelf stable and more affordable for me.
love it
Cilantro lover here. ☺️
I absolutely hate cilantro but I do love your videos and recipes!!
Thanks, Lucinda! I’ll be honest, I used to leave it out of everything because I was just too lazy to chop it!
Love cilantro! Does the vanilla lime Diet Coke at sonic have points?
I usually count a point for it because of the vanilla they put in it.
Hi, Beth! Yes, these lids only go on one way because of the compartments. They aren't super secure, but I'll still find ways to use them. :)
I have really tried to like cilantro but I don't. It tastes like soap. I feel the same way about Halo Top-I tried to like it but it's terrible!
"Of course some of this dislike may come down to simple preference, but for those cilantro-haters for whom the plant tastes like soap, the issue is genetic. These people have a variation in a group of olfactory-receptor genes that allows them to strongly perceive the soapy-flavored aldehydes in cilantro leaves." Can also make Tostadas out of them ...in my family we call them Chalupas.
Beans cook in one hour in an instapot
This was a good one. I think I might have to shop my pantry and do some of these tonight!
We are a house divided. I love cilantro but my husband hates it!!!
Quick question of the black bean alfredo recipe: you didn't say there was alfredo in it but it was in the pot. How much did you use? Was it the rest of the jar from the other recipe? Your inspiration recipe used 14 oz.
I think I used the whole 16oz jar.
Yummy!
If you soak the beans in fresh water for around 12 hours, It will take only 2-3 hours to cook.
True! Thanks for the tip!
Love cilantro, Hubby hates it. Sorry for your containers. And yummm
Thanks, Gina! Yeah, the containers were a bummer.
I’ll find a use for them. Maybe snack plates for the kids. 🤷♀️
Chuys is the neat!
Hey, now you can have strawberries and vanilla yogurt!
The tortilla looks uncooked? Is they safe to eat? All my life up till now I was thought you must cook them but some folks don’t.. I find that puzzling?
Both meals look great. I would add chicken only because I need to eat meat to stay full. Thanks for sharing!
I Love cilantro. I would at least garnish almost every dish with it. Unfortubately, I am the obly one in my house who feels that way. My FIL would rather pull his eyelids off than eat cilantro.
I like cilantro but in small amounts. If there's too much, all you will taste is cilantro
First time I tasted Cilantro thought it tasted like soap now after a few years add it in about everything.
Those were both great looking dishes Mindy! The taco one especially with the corn salsa and creamy sauce, it sounds really delicious. I'm going to make the creamy sauce next time I make tacos!
I’m about to have it for the second day in a row! It was delicious.
All looks so good. Run you covers under hot hot water.....it loosens up a bit and easier to put on containers
Thanks, Rosemary, I will try that! I think the issue with these though is they don’t fasten. There’s nothing for them to fasten to, so they lift easily. Nothing was “clicking” to tell me it was sealed. P

Vegetarian's eat cheese. Vegans don't.
I’m a cilantro lover but I’m married to a non lover. We are a house divided. 😞
We hate cilantro in our house!
I HATE Cilantro.....you asked. :)
This video is a year old but even more relevant now. Meat is so expensive 😩. Bacon, wings, seafood🤦🏽♀️
I hate cilantro. It tastes like soap. 😂
Haha! I have never heard it described that way!
Send them back I hate buying stuff and they don't work right .
I don't like celantro, it tastes like soap.
Lori, that is so interesting. You are the 3rd person to tell me it tastes like soap to them!
Hate cilantro and hate black beans
Cilantro tastes like soap to me🤦♀️
No thanks on meatless meals
Hate it and coriander it tastes like soap to me
Love cilantro!!!
