I use a regular foot, but it can be helpful to hold onto the thread ends before you start to stitch with a little tension and that will help prevent knotting.

You might want to make it a bit shorter if it doesn’t have as good of stretch recovery as normal elastic, and I wouldn’t worry about folding it in half - it should work great as is!

Great idea! I use a chopstick to aid in turning fabric right side out.
If you use tweezers if helps too
I’m going to try using the long ‘bodkin’ to turn the rectangular piece right side out. That should make short work of it, lol! 💜

Yes you can totally use fold over elastic!
