The story I heard….He got the nickname slowhand in the early days , before he had a tech, and he would break strings, he had to restring his own guitar. He had to do it manually and that is a slow process. Hence, he earned the nickname.

Same thing applies to his recent live performance of Knocking on Heaven's Door. The original studio version was a nice combination of rock & reggae with a touch of harmonica alluding to the blues.
