How to Make Kurumulaku Ittu Varatiya Mathi Curry:
Ingredients:
Fresh sardines (Mathi) - 500g
Black peppercorns (Kurumulaku) - 2 tbsp (crushed)
Shallots - 6-8 (sliced)
Garlic - 5-6 cloves (sliced)
Ginger - 1 inch (chopped)
Green chilies - 3 (slit)
Curry leaves - a handful
Turmeric powder - ½ tsp
Red chili powder - 1 tsp
Coconut oil - 2 tbsp
Tamarind - small lemon-sized ball (soaked in water)
Salt - to taste
Instructions:
Prep the Sardines: Clean and wash the sardines thoroughly. Set aside.
Make the Pepper Paste: Coarsely crush black peppercorns, garlic, and ginger using a mortar and pestle.
Sauté the Spices: Heat coconut oil in a clay pot or pan. Add sliced shallots, green chilies, and curry leaves. Sauté until the shallots turn golden brown.
Add the Masala: Add the crushed pepper paste, turmeric powder, and red chili powder to the pan. Fry for a couple of minutes until the raw smell disappears.
Add Tamarind Water: Pour the tamarind water (strained) into the pan and bring the mixture to a boil.
Cook the Sardines: Gently add the cleaned sardines to the boiling gravy. Cover the pan and let the fish cook on medium heat for 10-15 minutes.
Simmer: Allow the curry to simmer until the sardines are fully cooked and the gravy thickens to your desired consistency.
Serve: Garnish with fresh curry leaves and drizzle some more coconut oil before serving.
